Silicone anti-foams used in brewing are water insoluble and so will
eventually fall out. How long that takes I don't know. They are
approved for commercial use only for beers that are filtered to ensure
its removal. The stuff isn't going to kill you and you shouldn't have
to use more than a few mls so I wouldn't worry about it too much. As
Mike Schwartz' post suggests, by preventing foaming earlier in the
brewing process, anti-foam should preserve the potential of foam
positive proteins to do their job in the glass where you want it.

FermCap S is a unique emulsion of an extremely effective surface active

agent Dimethylpolysiloxane which prevents foam formation by reducing

surface tension. It is used to control foam in kettle and during

fermentation. It is completely removed from the beer after fermentation

by the yeast and filtration. As a result of preserving hydrophobic beer

proteins in solution it actually improves beer foam retention in the

finished beer."

It does state it that has a 12 month shelf life.

I've thought about the potential for contamination when using it in the

fermenter but there are a lot of breweries out there that do and have no

problems. I'd guess it's a matter of maintaining a clean environment

and possibly sanitizing the container and measuring equipment (dropper)

before use. I've read that there is nothing in it that would act as a

food source for bacteria or mold. That doesn't stop it from carrying

contaminants.

Kevin has something black in his vial of Fermcap. It is almost certainly
mold, and I strongly advise against putting something that is not sterile
into the fermentor. This includes the contents of a new bottle of Fermcap.

Perhaps if you boil it with a little wort it would be OK to add to a
fermentor, but it seems to me that if it keeps foam down in a fermenting
beer, it will also keep the foam down in the finished beer, which, of course,
is not desired. I suspect that Fermcap's ability to break surface tension is
"used up" in the boiling wort as long as one doesn't use too much.

I've been using it for starters and in the kettle with great results,
knocks the foam right down before boiling. However, I've never been able
to get it to work in the fermenter. I've put as much as 3 drops per gallon
in there but still get blow off. Is there a trick to that? Also, there's
some dark discoloration on the eye dropper in my vial of Fermcap-S right
now, after maybe a year of use. Could this be mold? I'll continue to use
it in the boil only just in case.

it works great. i use it in my flasks when boiling up starters with no
foaming hence no boil overs. if you have ever boiled wort in a flask you
know how much of a pain in the rear it is trying to control the foam. i
have used it a few times in the fermenter too, back when i only had a 5
gallon fermenter. never blew a stopper. pretty amazing really. i never
noticed any off flavors from using it and still had good head retention.

status 25 June 2012. Per the IRS, our case must be
assigned to an agent. IRS is currently assigning
applications received in March 2012. Ours was received
in late June. To current financials, HBD is officially
bankrupt in July. Due to recent developments, HBD.org
will likely have to be dissolved per the bylaws once
funding runs out.
Projected 2012 Budget $3,145.01
Expended against projection $ 85.95
Unplanned expenditures $ 0.00
Projected Excess/(Shortfall) ($1,194.50)
