Iron may well have a positive effect on foam quality (several metals do)
but above even 1 or 2 ppm, it's likely to have a negative impact on
flavor, and a very negative impact on oxidaton in the mash. Bamforth
wrote about the oxidation impact in JIB, and the flavor of a few ppm of
iron on beer should be apparent to anyone who has tasted beer made with
high iron well water.
0.5pp to 2ppm is the taste threshold range for iron. Various regulatory
agencies prefer an upper bound from 1-2ppm.
Cobalt stabilizes foam nicely - however it's toxic, as one Canadian
brewery found out in the 1960s after killing customers.
If anyone cares to dive through the archives, there was a long and
inconclusive discussion by Chad Stevens ~9-10 years ago, and I believe
that extracting some of the gums from flax seed was suggested as a
viable approach.
In any case a little, raw barley or wheat in the mash is a better idea
than adding iron.

A poster the other day asked about what George Fix had said about iron in
beer in one of his books. So I looked it up
In "Principles of Brewing Science", page 46, Dr Fix says that yeast requires
TRACE amounts of copper (0.012 ppm), iron (0.075 ppm), and zinc (0.5 ppm).
He goes on to say that most all-grain worts tend to be sufficient in all
three, and that excessive amounts of these metals can lead to other problems.
Nothing at all is said about foam.
Others have noted what happens when iron gets above trace amounts.

Last fall we used our own Tettnang hops for late addition.
I was amazed, how it improved the foam stability.
We used pellets before and not in small amounts as late additions.
But our whole hops really did the trick.
I always thought, that it should be about the same.
So if you want better foam stability, try whole hops.

Where did you read that iron in beer has a positive effect on foam? I have
never read that. However from all that I've read, found at times in
judging competitions and from personal experience, iron in beer is NOT
desirable. First iron above threshold levels leaves a distinct metallic
taste that is not desirable I any beer. Second, iron oxides very readily
contributing to off flavors. My home water out of my well is red with
dissolved and undissolved iron. It makes terrible beer. But filtered and
conditioned, removing the iron yields good water for brewing. I don't have
George's book but I knew George and heard a couple of his talks, in one he
did discuss this point: Avoid iron in your brewing water. If you want
positive affects on foam and head retention then (1) ensure sufficient
proteins to form and maintain foam, (2) brew hoppier beers since hop alpha
acids have positive affects on head retention, and (3) ensure proper
carbonation level since under-carbonated will not properly build head and
over-carbonated will break down head.

Per iron in beer, I remember advising a rather famous brewer back in
the days of yore (before he was famous) regarding his brewing water
when he moved from local environs out to the country. Due to the iron
content of his new water, his newly-brewed beers had an aftertaste
similar to that which you get after solidly biting your tongue or
cheek: it tasted of blood. Unless you're anemic or a vampire, this is
best to be avoided.
As indicated last month, the local post office finally had a smaller
PO box available, and I jumped on it! As invariably seems to be the
case, the process went awry, and the post office was rejecting HBD
mail unless it was address to me specifically (even though Home Brew
Digest, HBD, Home Brew Digest Server Fund, and HBD Digest Server Fund
were all entered in the required spaces on the application form, and
Change of Address forms were made for HBD addresses).
Short story: If you mailed something and received it back with a "not
at this address" notice, please bear with and try again - I *think*
I've corrected the issue with them.

Hi,
I read about iron in beer and the positive effect on the foam. To identify
iron: some foam on the hand greased after which a metal air is recognizable.
Now I read that in the book of George Fix (Principle of beer science)
explained that this metal smell can occur after oxidation (redox reaction)of
the beer.
Does anyone know where this is mentioned in the book? Page nr?

Subject: iron in beer?
Hi,
I read about iron in beer and the positive effect on the foam. To identify
iron: some foam on the hand greased after which a metal air is recognizable.
Now I read that in the book of George Fix (Principle of beer science)
explained that this metal smell can occur after oxidation (redox reaction)of
the beer.
Does anyone know where this is mentioned in the book? Page nr?
