Subject: Contamination problem

Hi all you brewers out there. I have a comment/question with which hopefully

someone can help me.

I've been brewing a honey amber ale for a while now; the OG is about

mid-60s, FG around 12, using Fermentis Safbrew T58 yeast. Recently the

batches seem to come out nicely after secondary/conditioning in the bottle,

but invariably get very sour after one or two weeks stored in a warm room.

This had never happened before, so I assume some bug has been getting

to the beer before it is drunk. The first thing I did was to change blowoff

hoses, soak my auto-siphon in lye for a day, and stop using my iodophor

more than twice. The problem has persisted, so I did a little research.

Considering the vinegary/sour flavor and the fact that the problem seems to

occur in the bottles, I am thinking it is some Aceto-bacter bug. It is
apparently

very persistent, and is hard to eradicate from the plastic equipment, so I'm
tossing racking bucket, auto-siphon, etc.

Any additional help on the issue? Anybody out there had this problem?

Why don't I drink it instead of storing it, you may ask? I'm trying to start
a

microbrewery, so I've been selling the beer, which makes it impossible for
me

to control what happens to it before it is consumed.

My Pliny the Elder clone recipe calls for 7 days of dry hopping. Those hops are
then removed and a second set of hops are added for another 7 days.

I would guess that so long as you do a lower temperature (beta glucan
rest) at 95-104 F, that it would be fine. This might also improve head
retention.

Thee primary implication will be the additional proteins in the beer that
may not clear as a lager should be. But I've had Weizens go krystal clear.
The proteins may affect mouthfeel. Depending on the lager style being
made, this could be a detriment. Of course 25% change in fermentables will
have some affect on the flavor, and depending on the lager style this may be
acceptable, good or bad. The Weizenbock has a high percentage of malted
wheat but is made with ale yeast, so it's not a true bock, but bock
strength; however I have seen this been lagered after fermentation. This
is a small percentage of malted wheat in Kolsch, an ale that is fermented
cool and lagered.

So the bottom line is "what are you trying to achieve?" Try it. Since
lagers should nearly all have bright to brilliant clarity, that is likely to
be the main challenge to overcome with that much wheat, but you can fine and
perhaps filter.

NOTE: With the economy as it is, the HBD is struggling to
meet its meager operating expenses of approximately $3500
per year. If less than half of those currently directly
subscribed to the HBD sent in a mere $5.00, the HBD would
be able to easily meet its annual expenses, with room to
spare for next year. Please consider it.

501(c)3 status rescinded. Refiled 1023 for retroactive
status 25 June 2012. Per the IRS, our case must be
assigned to an agent. IRS is currently assigning
applications received in March 2012. Ours was received
in late June. To current financials, HBD is officially
bankrupt in August. Due to recent developments, HBD.org
will likely have to be dissolved per the bylaws once
funding runs out.

i would try moving the 20 min hops to flame out with the other aroma
hops. with a 15 min whirlpool those 20 min hops are pretty much just
bittering hops. my pale ales and ipa's all get this treatment now days.
i'll do a small 60 min addition then a large addition at flame out and
whirlpool hot for 15 mins then start chilling with a counterflow
chiller. i have been extremely happy with the change.
