The beer described in that article used added electrolytes that was said to
reduce the effect of a hangover. I recall a number of years ago there was
a recipe in BYO for a beer that replaced about half the water with Mountain
Dew (http://byo.com/light-ale/item/1167-mountain-brew). Perhaps the same
thing could be done with Gatorade instead to get electrolytes into the
brew. :) Just imagine the flavor possibilities!

Subject: Contamination Problem from HBD #6032

In regards to the contamination problem from a couple Digests ago, can you
provide any tasting notes on the quality/type of sour note that you're
getting?

Is it a clean yoghurt-like sourness (lactic acid) or is it a sharp
vinegar-like sourness (acetic acid)? -This will help to t-shoot what organism
we might be dealing with.

Acetobater will produce acetic acid / vinegar but it definitely requires the
presence of oxygen so under typical fermentation and bottling conditions it's
pretty low on the list. Acetobater is carried by fruit flies and it's
probably the main source of acetobater infections. -Is this a chance?

Changing subject slightly from what organism might be at fault, when in the
process are you adding the honey? -Honey naturally has microorganisms living
in it (wild and strange yeasts); they can't ferment in honey because the
specific gravity/ osmotic pressure is to high but as soon as honey gets
watered down they can start to ferment and I've found they can produce some
nasty flavors. -If you're not hitting the honey with significant heat they
could be alive and producing the acid that you're dealing with, too. (Mead
makers: don't shoot the messenger; I know over heating delicate, expensive
honey is mead making blasphemy but it doesn't change the facts.)

It certainly COULD be in your equipment but I wouldn't necessarily throw it
all away. Give it a stronger than usual soak in an alkaline cleaner like PBW
(or a blend of PBW and an oxygen-based cleaner), the rinse and give it a
stronger than usual soak in StarSan. -You'll attack the problem from several
different angles this way to even if it's a microorganism that can deal with
a low ph, you'll still take care of it (if it's acetobater PBW + Oxygen-based
cleaner should take care of it in a hurry).

If you want to go crazy and all of the equipment can deal with hot steam
give it a good steaming, too. Steam will lyse cells rather quickly.

I have successfully used ~ 1/2" foil-backed polystyrene foam insulation (
Home Depot, e.g.). wrapped around a kettle, carboy or whatever , shiny side
out. The shiny metallic tape which goes with it makes a good and easy sealer
and looks nice. cut to any size it comes in a 4X8 ft sheet and a lot cheaper.
and about the same insulation value. And yes it works great as the
temperature drop in an hour is less than 1 degree with 5 gallons, if you make
a bottom (piece on the table) and a top.

Remember the insulation is flammable, and due care must be taken not to
pyrolize your mash and kitchen.

I concur entirely with Michael Thompson's endorsement of Nathan Watkins's
cold steeping coffee method from Zymurgy. In fact, you might try this for
your morning cup sometime as an experiment. Heat the cold coffee in the
microwave (I know; it's heresy to coffee purists). Of course there is no
need to heat the coffee for addition to beer.



One thing I might add is that for beer it's best to use coffee beans with a
medium roast. Darker roasts such as French roast and espresso, for example,
as well as most of Charbucks (er, Starbucks) varieties, tend to bring out
the coffee oils that can cause a sheen on the surface of the beer and reduce
the head. For the same reason, Watkins recommends a coarser grind; fine
grinds again tend to bring out the oils.

Subject: RE: Mashtun Insulation

Mike Morton asks about mash tun insulation. I've had good results with
something similar to Reflectix, which is essentially bubble wrap with Mylar
on both sides. Wrap it around your mash tun and secure with some tape.
Easy on and off if you are going to be direct firing the mash tun as a
kettle in a BIAB setup.

I've don't directly heat my mash from the outside, so I've been considering
a nanotech paint-on insulation. It's a bit pricey, but seems like it would
do the trick.

denim material but have seen fiberglass that's completely sealed in plastic
sleeves to ease installation. I use closed cell foam like the sleeping pads
they sell at sporting goods stores for camping or exercise pads. Works
great, very easy to work with, and reasonably inexpensive.

way. It should be really strong, and perhaps 1/2 pot or less.

Coffee beans typically are roasted ca 500F and higher - no
worries there. For the larger distributors, packaging is
pretty much automated, while the post-roast practices in a
smaller specialty shop might be a little more ... personal.
Ask them. If you're concerned about your own grinder, just
put the beans in your muslin steeping bag and thump on them
for a while. Note that "in the secondary" is equivalent to
"in dilute ethanol," so you have some margin of safety.
Remember that whole beans carry a fair amount of oil, either
on the surface in the darker roasts, or in the interior, so
anticipate some impact on heading.

Subject: Mashtun Insulation

Hiyas,
I am about to brew my first Brew-In-A-Bag batch (British Pale) and thought
some insulation around my brewpot/mashtun to help hold the mash temp
couldn't hurt.
I looked at insulation materials online at the Home Despot (sic) site
and found a Denim Insulation Water Heater Blanket. It has an R-Value
of 6.7 and 48X75 inches. Seems it is standard to cut this material to
fit your water heater and comes with some tape to stitch the seam.
Seems like a reasonable material to use - no fiberglass to deal with.
Plan is to cut to fit the circumference and height of the pot, and cut
a piece for the pot base and one to drape over the top. Thought I might
also place the pot in a snug-fitting cardboard box for a little bit extra
temp-holding ability.
My questions are-
Has anyone worked with this for poor-boy insulation of brewing equipment?
Is the R-Value adequate in your opinion?
I think I might achieve something
similar if I were to take some R20 to R30 fiberglass insulation and tape
some heavy paper or other "skin" to encase it so I don't have exposed
glass fibers around my wort.
Any thoughts or alternative suggestions appreciated.

Best suggestion I've seen was from Nathan Watkins in the
September/October 2012 issue of Zymurgy. He calls it a Coffee Toddy.
The cold infusion helps prevent bitterness.

Making a Coffee Toddy
For 5 U.S. Gallons (19.83 L) of beer

EQUIPMENT:
1 quart jar with lid, sanitized
2 muslin sacks, or pantyhose

INGREDIENTS:
2 oz. (57 g) of coffee ground to electric percolator (second from
coarsest) setting on commercial coffee grinder.
2 cups (473 ml) water

PROCEDURE:
1. Place ground coffee into the doubled muslin sack or pantyhose
inside jar, then stretch around the outside of the jar.
2. Fill with 1.5 cups (354 ml) cold water and put lid on tightly.
3. Leave in the refrigerator for 24 hours.
4. After 24 hours, open lid and lift out sack of coffee. Pour out the
remaining coffee toddy, leaving the dregs (last coffee bean bits)
behind.
5. Add to secondary before transferring from your primary.
6. If you only have a primary, put the toddy in before bottling, or,
if you keg, the Cornelius keg upon transfer.

Important note: The ideal ratio of coffee to water is 1.0 oz. (28 g)
coffee to 8.0 fluid oz. (237 ml) water.
