Subject: Dr. Lewis' Mash schedule

I'm in between brews and got a little bored. I'm a data hoarder so this
information comes from an old HBD from Janruary 1994. Pat Anderson published
his notes of a talk by Dr. Michael Lewis given at Home Brew U on March 27,
1993
titled "GETTING THE MOST FROM AMERICAN MALT."

Dr. Lewis espoused the idea that using a thick mash (1qt/lb?)and setting a
mash temp of
131-140F for 20-30 Minutes and 158-167F for 20-30 minutes is all the mash
that is
needed for modern Malts.

My question is if anyone has tried this schedule and what were the results?

Subject: HBD On The Move...

Greetings, Beerlings! Take me to your lager...

At long last, I've initiated the move of the HBD from its commercial
connection to a hosted solution. I will do my best to keep you abreast
of progress, but be aware that the HBD itself (the email list) may be
knocked out of commission while I wrangle the code to conform to its
new environment - I'll run both systems in parallel until either the
new server will run the scripts, or until the HBD coffers run dry.
Unfortunately, I'll have to whack the existing connection as I simply
cannot afford to run a deficit in the HBD treasury against my own
budget at this time. Hopefully, I'll be able to get the scripts
running under their new environment before that happens.

Alejandro is having trouble controlling his fermentation temperature in a
100 gallon conical, glycol jacketed fermentor. Alejandro is experiencing
substantial hysteresis in his temperatures relative to the controller
settings. I have no experience with such volumes, but it seems the community
could use a little more information before we can help.

My first thought is to reduce the differential from 3 degrees to 1 degree.
This would certainly reduce the hysteresis. It would help us to know where
the temperature probe is located, and I think it would also help to know the
temperature gradient within the fermentor from center to wall and top to
bottom.

It seems that minimizing the differential on the controller and optimizing
the placement of the probe would be most straightforward approach to this.
Surely the small commercial brewers have a standard workaround to this common
issue.

Alejandro

As I see it you have multiple problems. First your 3 degrees differential is

too high, and let's assume your temp probe is in the middle of the

fermenter. The fermenting wort close to the walls cools fast unlike the

middle. Even when the ferment is rapid it will overshoot your required temp.

Some thoughts for you.

1. Reduce your differential say to 1 degree.

2. Restrict the output of your glycol pump to slow the cooling rate.

Reducing the differential will mean your cooling pump will run more often,

but for a shorter time.

A timer will cause you grief when you need to crash the ferment at the end.

You will need to experiment to get your system tuned to your needs. I would

play with your differential first, keep reducing it and this may be all you

need to do.

Subject: Problem controling fermetation temp

Hi all! I've recently started fermenting using a 100 gal conical, jacketed
fermenter. I'm attempting to control the temperature using an A419
Johnson temp control, set to start glycol flow through the jacket at, say,
68 deg Fahrenheit. The temperature at which the relay is turned off is
defined by the temp differential, say 3 degs. So, in theory, when the
thermostat reads 68 or higher, the glycol starts to flow, until the temp
falls to 65 degrees.

The glycol is stored in an insulated tank ranging from about 23 to 28
degrees.
The problem is, apparently there is a lag time between the moment
that the correct amount of heat has been drawn out from the wort in
the tank, and the moment that the sensor actually reads the target
temperature and stops the glycol from flowing. So what happens is
that the temperature keeps dropping quite some time after the glycol

has stopped flowing, bringing the temperature way below the lower
limit (say, 57 or 57 degrees). This can have quite adverse effects on
the yeast, as you all know.
Since the fermenting wort is not supposed to be moved around in the
tank (which would homogenize the temp and provide a quicker, correct
read), I figure I might use a timer to limit the flow of coolant for a set

length of time, assuming that the correct amount of heat will be
subtracted from the wort.
An opinion, anyone? Do you think this is the best way to go?

Subject: Semi-annual plea for donations, and other help.

Greetings, Beerlings! Take me to your wallet..

For anyone who may have peeked in on the Finances page, the HBD coffers are
on the wane. We could definitely use any donation you can spare - and, if
you itemize on your US taxes, any donation you make is deductible to the
full extent allowable under the law - see the Disclosures link on the HBD
website for the IRS determination letter.

Also, the pace of life is keeping me from doing as much with the code as
required to port the HBD and Brews and Views to new systems. I am looking
for some coding help:

The current system for the HBD is a redhat-flavor, sendmail-based server.
The target is Ubuntu (Debian-flavored), postfix based virtual server
operating under Virtualmin. The scripts that drive it are predominantly
kornshell, with some perl and C thrown in for good measure. If you are
familiar with both OSes, both email servers, ksh, perl, and C, and have the
capacity to dig in and assist, pop me a note and let's talk!

Brews and Views is on that same redhat flavored box and runs on Discusware
Pro. The target machine is, again, virtual and Ubuntu based, and the
software is phpBB. Through the brief research I've been able to do with the
time available, by installing an old version of phpBB, the Discusware
system can be converted to phpBB, and then phpBB can be upgraded to the
current version. If this sounds like something you're capable of and
willing to tackle, give me a shout.

But, primarily, HBD needs funding to continue. Please consider a

All looks good excepting the mashing water treatment. While the small
addition of CaCl2 is appropriate, it alone is not likely to move the mash
pH down into a desirable range around 5.3. An external acid addition via a
lactic acid or acid malt addition will be required. For German styles,
those acids are desirable since they contribute lactate which is a
component in the overall flavor profile.

You mention sparging water acidification. Due to the very low alkalinity of
Seattle water, there is little need to acidify that water. But it doesn't
hurt. It should only take a few drops per gallon to make the pH drop like a
rock.

Subject: Kolsch Tips?

My home brew club is doing a group brew of a pretty simple Kolsch recipe; I
figured I'd share my Kolsch / light beer tips and I'd solicit any others that
people have.

As you can see I'm very much interested in a Kolsch without any HINT of
graininess or lingering / harsh bitterness and that is bright / clear.

Grist:

* As always if you want to go traditional a simple grist is the way
to go and always use German ingredients; a blend of mostly Pilsner with some
light malted wheat and a small bit of light Munich if desired

* Dough-in: I find the German Pilsner + wheat malt combo to really
result in a lot of dough balls so be ready to really spend some time getting
doughed-in properly if you're mashing in above the gelatinization temp

* Milling: Conditioning your malt will help keep husks from getting
shredded; shredded husks release more tannins/ polyphenols which ruin light
beers, IMHO (use 2% water by weight sprayed with a fine mist and thoroughly
mixed; -let set for 10 min before milling

Water:

This is an area I'm looking for tips; I have EXTREMELY soft Seattle water
that I treat with double stage carbon block filters.

* 1 Tbsp calcium chloride added directly to the mash (to help the
mash ph, aid clarity and to focus on soft, malty flavors)

Mash:

* I like to mash light beers on the thinner side to have less sparge
water to decrease the likelihood of extracting tannins

* Mash low for that high fermentability that you want in a kolsch;
alternatively multistep infusion mash or upward infusion mash (the upward
infusion mash starting from below the gelatinization temp will avoid dough
balls as an added bonus) -I target 63C which I guess is 145.4F

* Recirculation mash for 60 min; if not recirculating a 90 minute
mash will give you that extra bit of fermentability

* Avoid oxygen pickup especially if recirculating -oxygen will
increase color of this VERY light beer style

Sparge:

* Again limit oxygen pickup

* I batch sparge my kolsch to reduce the risk of over sparging and
extracting grainy tannins

* Acidify sparge water to avoid extracting grainy tannins

* Heat the initial runoff (First runnings) to 68C and hold there to
"super charge" enzymes and to essentially perform a 2nd step

* Target a lower-than-normal 1st batch sparge temp of 68C to "super
charge" enzymes left in the mash as an essential 2nd temp step

Boil:

* At home brew scale 90 minute boils for DMS from pilsner malt are
largely unnecessary; this especially holds true with my 1:1 height to width
kettle geometry and high boil off rate

* I use an electric low heat density element and turn the heat
output down to 60% for all but the last 10 min of the boil to keep the wort
darkening to a minimum

* With 10 min left to the boil I add both whirlfloc and polyclar
(PVPP) the combination is GREAT at helping both hot break and tannin
flocculation but results in lots of fluffy trub and large wort losses

Chill:

* Chill rapidly below 140F to prevent DMS formation

Fermentation:

I'd love some discussion on temps with the different kolsch strains

* The colder you're fermenting the more yeast you need but target in
between ale and lager pitch rates, depending upon fermentation temp

* Transfer off of the trub, prior to pitching, as in the German
tradition

* Pitch at fermentation temps -don't pitch high and wait for it to
chill; upward fermentation ok; flat fermentation temp profile ok; downward ==
bad

* Personally I simply ferment at 60-63F

* Either skim off the "braun hefe" -brown fermentation crud or let
it blow off via blow off tube to avoid harsh bitterness

* Lager: cold and long (-1C for as long as you can stand it)

I'm very much interested in tricks to get this thing to drop bright when you
only have 3 weeks to lager. Should I just give up hope with a Kolsch strain
and clarity without filtering; any finings recommendations?

Subject: Re Software Problems Update

Hi Everyone

Thanks for the response from so many people re my migration from XP to

Windows 7. Shortly after all your helpful advice came in we went to the UK,

and have recently returned.

I have since discovered that changing from 32 bit to 64 appears to has

caused some of my problems.

Re software we have installed a virtual machine running XP and my trusty old

software works again. My Son Sean did all the cleaver stuff using VMware

virtual player, not sure why we did not use the Microsoft version but this

one works very well.

Some of the groups advice re networking software made me think what else can

I do to make brewing days easier. I have faithfully recorded by hand every

batch of beer I have made, but am finding some days I struggle to hold a pen

for very long so maybe a tablet in the brewery is the way to go.

George can't get his lager to carbonate in the bottle after 3 months of
lagering the beer at 40 degrees (F), bottling, and waiting for 4 weeks with
the beer at 55 degrees. I'm assuming that no yeast was added at the time of
bottling and that sugar was.

I suspect the lagering period dropped out the yeast so well that the beer
simply doesn't have enough yeast now to ferment the priming sugar. I've seen
this happen a lot with extended periods of letting the beer drop the yeast,
and now always add a small amount of fresh yeast at bottling for bottle
conditioning.

I would suggest making up a small starter of fresh yeast (same yeast) and
pipetting some fresh yeast (1 million cells per mL beer) into each bottle,
recap, and allow the beers to carbonate at a somewhat warmer temperature, say
68 degrees. The fermentation of that small amount of priming sugar at this
warmer temperature shouldn't significantly affect the flavor of the beer. If
you are concerned, you can carbonate at 55 degrees. If it doesn't carbonate
fast enough for you at 55 degrees, warm it to 68 degrees, and it should
carbonate. You'll know that you have yeast in there to do the job.

I lagered a bock in a 40 degree fridge for 3 months after a good
fermentation and room temp rest.
Then I bottled it like an ale but it doesn't want to carbonate after
4 weeks in the bottle at 55 degrees.

genetic family tree to better understand their brewing properties. "With

this information, we'll be able to select different properties in yeasts and

currently exist," said Kevin Verstrepen, whose lab in Belgium is one of two

Subject: Gruit recipe

I make a gruit every year or two. The recipe changes every year, here is one
from two years ago:

has a distinct mugwort flavor, which I rather like. Watch out for wormwood -
I used .25 teaspoon in five gallons and I could taste it!

I just made another batch yesterday, using cinnamon bark, yarrow, and
horehound. It tasted good going into the fermenter!

Subject: Gruit Ale

Hello all

After the brewing software runs again(at least if you have Promash...),
i want to ask you something else.

I wanted to brew a gruit ale for a long time, but i couldn't find the
herbs suggested. (Not available, too expensive or from too far away)

One of the hard to get plant was wild rosemary(ledum palustre). It's
also slightly toxic, but what do you expect in a "whiches brew".

Yesterday i stumbled upon a German company, that sells this plant.
(Shipping to my country is not too expensive)

Then i found another company, that supplies the rest of the suspects.

Myrica gale
Achillea millefolium
Calluna vulgaris
Artemisia vulgaris
Artemisia absinthium

I ordered all of these live plants and will put them in my yard.
Hopefully they will grow nicely.


I found some recipes on the net, but is there someone on the HBD with
gruit experience?
If yes, can you give me some insights? Recipe, no-goes handling of the
herbs and so on?
I will also reread "sacred herbal healing beers" from Steven Buhner.

I've found that storing everything on Google Drive - including the
.exe and I'm able to run it
from any Windows based computer I sign onto with my goole account.
1 place for the recipes - works sweet.

Similar to what Pete and Pat do, I run Promash from several computers
at home with a single "central" database. I use Dropbox! The whole
Promash program (and associated data files) is installed in a Dropbox
directory, and I just run it from there. I could even run it from work
without
any more serious security concerns than I'd already have with Dropbox.

(My employer has very serious concerns, so I can't really do that. Not due
to Dropbox's security, just because they do NOT want us linking to any kind
of
location where we can upload mass amounts of sensitive data from the
workplace.)

I'm running ProMash on my Win 8.0 tabled computer. No problems, no XP
emulators.

I found an interesting way to use it with multiple computers and just one
database.

I have an XP desktop computer where I keep my recipes and inventory of
grain, hops, etc. When I brew I brew in the garage and take a portable
computer out there with me. I used to use a Win 98 laptop, then an XP
notebook, and now a Win 8 tablet. I found I could run ProMash on any of
these computers and access the desktop data using a few simple steps.

(1) Set up network and sharing properly so each computer can access the data
files and program files on the desktop. In my case the databases are in My
Documents and ProMash is installed in Program Files.

(2) Install ProMash on all computers. I hope this doesn't violate some
terms of use for ProMash. I am the only user and only for my home brewing
and I use it on only one computer at a time.

(3) Using the "portable" computer go to the copy of ProMash on the desktop
(C:\Program Files\ProMash\) and click on ProMash.exe.

ProMash will open and run just like it was on the desktop with all the
recipes and inventory files. I guess by installing ProMash on the portable
computer I get all the dll and other environment files I need to run ProMash
and by running the version on the desktop, it knows where all the files are.
So while I am brewing I can check and update my inventory, view my recipe,
and what ever else using just one central set of data.

I will echo Pete's comments. Runs like a top on all my Windows boxes -
ProMash doesn't appear to wrangle the registry at all. I'm pretty sure it
keeps all of its presets and preferences in static files within its folder

As opposed to Pete, I keep my database on an NAS drive, and can access it
from anywhere in my home. As an experiment, I did have it outward facing at
one time, which let me access it from anywhere I could get a WiFi or 4G
signal, but it quickly became a "hacker's honey pot", so I put it back
behind the firewall.

That's efinitely the _ideal_ (and quite simple) solution.

I've been running ProMash on a Macintosh under OS X...and I don't even have
_any_ version of Windows installed on the computer.

Therefore, one of the many VM solutions out there will most certainly be
able to run it perfectly on a PC running Windows OS.

Subject: Back-sweetening a mead

I've got a mead fermenting that started at 1.121 and is now down to
1.006 (1.023 corrected). Since it's still fermenting it might finish
a little dry, so I thought once it stabilized I'd back-sweeten it
with some honey, but of course I don't want to restart fermentation.

What's the best way to kill off any remaining yeast? Potassium
Sorbate? Potassium Metabisulfite?

What's the best thing to use and how much should I add to a five gallon batch?
