(I think they meant projected 2013 budget)

I guess the decision is whether HBD is valuable enough to pony up, or if
it's time to let it die. I think it'd be a shame to lose it - even as
sporadic as the actual digests are these days - plus, I can't stand the irony
of them getting their 501(c)3 status just to go bankrupt. A sign of the
times, I guess.

For my part, as little as I have, I'm coughing up some bucks to keep it
going.

Subject: Yeast Questions

I recently ran an experiment that I've wanted to try for a long time. I had
a bad batch of yeast (I think it got too cold) and was stuck with a fresh
batch of wort (a blond Kolsch-like base) and no beer yeast. Instead, I
direct pitched an appropriate amount of dry wine yeast (K1V-1116). It took
off within a couple of hours and by the next day an extremely thick head
had formed with what looked like a tan/brown leathery outer skin. The
temperature during fermentation has floated between 58-62 F. After five
days the head finally developed some cracks and began falling. However,
through the cracks white foam is bubbling up gently. I'm guessing by now
it's chewed through all the simple sugars and is now struggling with the
malt sugars.

Has anyone here tried fermenting beer entirely with wine yeast? How well
did it attenuate and what was the flavor profile like? How long did it take
to finish?

Another yeast question I had was regarding lager yeast harvesting and/or
repitching. I recently moved to a much cooler climate and so lager brewing
without refrigeration is now a possibility. I've consulted all my brewing
books but without exception they only discuss havesting/repitching
techniques for ale yeasts. I'm going to be brewing utilizing open
fermentation so access for harvesting will not be problematic. I would
assume top cropping is not possible due to the bottom dwelling nature of
lager strains. Am I left with scooping off the bottom after primary and
culturing up a starter for the next batch? Or should I try harvesting prior
to the end of primary (or at some other stage)? Since I'm not using a
cylindroconical "dumping the cone" is not an option.

Promash was the go-to software for many years but unfortunately is no
longer being actively updated and who knows how long it will still
function. When you look at the web site there are "news items" from
2003 when he released the last update.

Most people I know, even those who started with Promash, now use
BeerSmith. BeerTools is also out there but not as intuitive or easy to
use as BeerSmith, though there is a new version that just came out. I
have both BeerSmith and BeerTools and prefer BeerSmith for ease of use
as well as greater functionality. Brad from BeerSmith also offers
excellent support and contributes to the community. They all offer free
trials for 21 to 30 days so download them and check them out. There are
other options for Mac that I'm not familiar with.

Subject: Learning how to taste

So I got myself roped into teaching yet another BJCP class for the tasting
exam. This time I would like to focus more on how to taste. The facts and
styles are pretty easy to convey but how do you best teach someone (or
yourself) what something tastes like? We use a lot of words in judging that
do have commonly accepted meanings. Words like bready, roast, citrus, and
floral are pretty common and obvious aromas and flavors (mostly).

But what about the odder flavors and subtle flavors? What do you use to
teach someone else what you are tasting? Distinguishing between different
malts or different hops?

Resources? Books?

Hi Michael,

You have a couple of options. I like Promash as it is what I learned on.
It hasn't been updated since 2009, but does work on newer operating systems
(Win 7 & 8) with only the Help function not currently working. The other
major home brewing software package is BeerSmith. It is being updated (Dec
2013), but I have a preference to Promash.

In Promash, I have all my recipes saved into BJCP beer style folders. So it
is pretty well organized. Only problem I have with Promash, is saving
recipes without overwriting the original is a little kludgey. Other than
that, works great for me.

I like ProMash. Although it can seem overly complex at first.

It keeps recipes, allows sessions where you can modify a recipe (like for
different hop alpha)

Different mash schedules, water profiles, etc, etc.

But the thing I really use is the inventory. It keeps your inventory. When
you have your brew session ready to go it will check it against your
inventory and you can see what you need. Then when you brew you can tell it
to subtract what you used.

Best $25.00 Christmas present I ever got.

Hi All,



In HBD# 6074 Scott Dunn asked for some tips about dry hopping, and how to
increase hop flavor and aroma.



First off, I have dry hopped many times and never had an issue with
getting any type of infection from the process. The alcohol level in the
beer after the primary ferment is finished, and the lack of food for the
bugs, should prevent infections from any bugs that may be on the dry hops.
Maybe you were dry hopping a lower alcohol beer? Maybe you just got some
"buggy" hops? Maybe the infection was from a different source than the
hops? It's almost impossible to say what went wrong.



I haven't tried the process yet for myself, but there is a fairly new hop
flavor and aroma addition process called "hop stands". The idea is that you
add the hops after the wort has cooled down to approximately 160F or 170F
and let them sit at that temp for a while before cooling further (not sure
exactly how long, but it's not too long). It pretty much requires an
immersion chiller. This hop stand addition can replace either or both of
the knock off and/or dry hops.



I have tried several beers made with this method and the result was very
nice. Great aroma and flavor without the vegetal notes that can sometimes
occur with heavy dry hopping.

Subject: Homebrew Recipe Software

Hoping my fellow brewers can help me out with a recommendation or two.
After almost 20 years of keeping my recipes and notes in a paper file, I've
decided to take the time and get organized with a recipe database. I know
there are several good homebrew software applications available, but I'd
like advice/recommendations on the one that best focuses on the simple task
of storing and cataloguing recipes. I want to input beer styles, beer
titles, ingredients, brewing instructions, brewing dates, ratings, and
notes. The goal is to be able to easily sort and find recipes, modify
recipes, etc.

I know I could do this by creating my own database in MS Access or other
database software, but I figure some of the extra's that come with the
homebrew software I've seen may be advantageous. Plus, why recreate the
wheel if a good recipe database already out there? Thanks.

Subject: "Dry" hopping

Hello Fellow brewers:

I have recently been having a difficult time getting great hop flavour and
aroma in my brews. I have been adding hefty dosages of aroma hops at knock
out and then again in the secondary fermenter. Most recently I noticed that
my brew started to ferment again after I added the hops to the secondary. I
thought nothing of it at first, then a week later I pulled the bubbler and
sure enough there it was, that freaking wild yeast fermenting smell. I have
not tasted it yet, but I already know this carbouy is a goner and will be
dumped. Here are a few questions for the group:

Have others gotten a wild yeast from dry hopping? Is there a way to prevent
that from happening?

How do you get great hop aroma and flavour. My particular interest is with
East Kent Golding hops.
