Subject: Gruit recipe

I make a gruit every year or two. The recipe changes every year, here is one
from two years ago:
https://sites.google.com/site/fossilcreekbrewing/home/dark-ages-gruit-ale. It
has a distinct mugwort flavor, which I rather like. Watch out for wormwood -
I used .25 teaspoon in five gallons and I could taste it!

I just made another batch yesterday, using cinnamon bark, yarrow, and
horehound. It tasted good going into the fermenter!

I recommend visiting the Gruit Ale web page for information and ideas about
this historical beer.http://www.gruitale.com/.

From: Thomas Rohner <t.rohner at bluewin.ch>
Subject: Gruit Ale

Hello all

After the brewing software runs again(at least if you have Promash...),
i want to ask you something else.

I wanted to brew a gruit ale for a long time, but i couldn't find the
herbs suggested. (Not available, too expensive or from too far away)

One of the hard to get plant was wild rosemary(ledum palustre). It's
also slightly toxic, but what do you expect in a "whiches brew".

Yesterday i stumbled upon a German company, that sells this plant.
(Shipping to my country is not too expensive)

Then i found another company, that supplies the rest of the suspects.

Myrica gale
Achillea millefolium
Calluna vulgaris
Artemisia vulgaris
Artemisia absinthium

I ordered all of these live plants and will put them in my yard.
Hopefully they will grow nicely.

I found some recipes on the net, but is there someone on the HBD with
gruit experience?
If yes, can you give me some insights? Recipe, no-goes handling of the
herbs and so on?
I will also reread "sacred herbal healing beers" from Steven Buhner.

Cheers

Thomas

(today i will brew 16 gal of Saaz hopped vienna bock at 1.072 OG)

Similar to what Pete and Pat do, I run Promash from several computers
at home with a single "central" database. I use Dropbox! The whole
Promash program (and associated data files) is installed in a Dropbox
directory, and I just run it from there. I could even run it from work
without
any more serious security concerns than I'd already have with Dropbox.

(My employer has very serious concerns, so I can't really do that. Not due
to Dropbox's security, just because they do NOT want us linking to any kind
of
location where we can upload mass amounts of sensitive data from the
workplace.)

Subject: Re: Homebrew Recipe Software

I'm running ProMash on my Win 8.0 tabled computer. No problems, no XP
emulators.

I found an interesting way to use it with multiple computers and just one
database.

I have an XP desktop computer where I keep my recipes and inventory of
grain, hops, etc. When I brew I brew in the garage and take a portable
computer out there with me. I used to use a Win 98 laptop, then an XP
notebook, and now a Win 8 tablet. I found I could run ProMash on any of
these computers and access the desktop data using a few simple steps.

(1) Set up network and sharing properly so each computer can access the data
files and program files on the desktop. In my case the databases are in My
Documents and ProMash is installed in Program Files.

(2) Install ProMash on all computers. I hope this doesn't violate some
terms of use for ProMash. I am the only user and only for my home brewing
and I use it on only one computer at a time.

(3) Using the "portable" computer go to the copy of ProMash on the desktop
(C:\Program Files\ProMash\) and click on ProMash.exe.

ProMash will open and run just like it was on the desktop with all the
recipes and inventory files. I guess by installing ProMash on the portable
computer I get all the dll and other environment files I need to run ProMash
and by running the version on the desktop, it knows where all the files are.
So while I am brewing I can check and update my inventory, view my recipe,
and what ever else using just one central set of data.

Greetings, Beerlings! Take me to your lager...

I will echo Pete's comments. Runs like a top on all my Windows boxes -
ProMash doesn't appear to wrangle the registry at all. I'm pretty sure it
keeps all of its presets and preferences in static files within its folder

As opposed to Pete, I keep my database on an NAS drive, and can access it
from anywhere in my home. As an experiment, I did have it outward facing at
one time, which let me access it from anywhere I could get a WiFi or 4G
signal, but it quickly became a "hacker's honey pot", so I put it back
behind the firewall.

Cheers!

That's efinitely the _ideal_ (and quite simple) solution.

I've been running ProMash on a Macintosh under OS X...and I don't even have
_any_ version of Windows installed on the computer.

Therefore, one of the many VM solutions out there will most certainly be
able to run it perfectly on a PC running Windows OS.

I've got a mead fermenting that started at 1.121 and is now down to
1.006 (1.023 corrected). Since it's still fermenting it might finish
a little dry, so I thought once it stabilized I'd back-sweeten it
with some honey, but of course I don't want to restart fermentation.

What's the best way to kill off any remaining yeast? Potassium
Sorbate? Potassium Metabisulfite?

What's the best thing to use and how much should I add to a five gallon batch?

Thanks!

Subject: Old Software

Hi

Have you tried the virtual XP, that comes with Win7 Pro and higher?
Sadly, it doesn't come with the home version.

I guess, most old software will run on it. (if it doesn't make use of
the hardware extensively, or uses strange programmers tricks)

By the way, i also got a "new"(used Dell, like new for 300$) notebook
with Win7 64 Pro.
I will try to install Promash, my preferred brewing tool. If it doesn't
work in native Win7, i will use virtual XP. (In the brewery, it runs
happily on Win98 for now. No need to change, until this HW dies... i use
a old 256Mb USB-stick with Win98 drivers for backup)

Cheers Thomas

Subject: Brewing software and Windows compatibility

Ian Ramsay asks about old brewing software and Windows compatibility. I'm
still a committed ProMash user and have successfully run it with every
version of Windows from Windows 95 to 64-bit Windows 8.1. There was a
problem with ProMash not loading with 64-bit versions, but this was
addressed about 2007-2008 with a "new" version of the ProMash installer.
It's still available for downloading on the ProMash website. You, will,
however, have to enter your registered user code and key. If you no longer
have them, there is an automated utility on the site to send them to you,
but it uses the e-mail address you first used to register ProMash.

I don't use much other old brewing software apart from some spreadsheet
utilities, so I must say I haven't had compatibility problems. If you do
have an old piece of software you're attached to, and you are certain it
really requires Windows XP, the solution is to download and install a
"virtual XP machine" and run it under later Windows versions. A virtual XP
machine (it needs to be installed) came with the Professional and Ultimate
versions of Windows 7, but this was discontinued beginning with Windows 8.
However, there are a couple of free virtual machines available if you do a
search for them.

Incidentally, a virtual XP machine is the solution for all software that
truly requires XP. If you are concerned about the security implications now
that Microsoft no longer supports XP, running a VM is an excellent choice.
It keeps XP isolated from various security threats by "surrounding" it with
Windows 7 or 8.

I'd expect it to keep running indefinitely. I run it on Linux under Wine;
while early versions of Wine had some layout issues, those have been fixed for
several years now. I have the program and all my recipe and brew-session files
checked into my Subversion repository, so pulling it onto a new computer (even
one that still runs Windows) is trivial.

Another option, if Microsoft does something with future versions of Windows
that breaks ProMash, would be to set up a VM with a version of Windows that
will work (or do like me and use Linux and Wine in the VM). This VM would be
portable across whatever OS and hardware upgrades may come.

About the only issue I foresee becoming a problem would be if the BJCP styles
changed substantially. AFAIK the last such change was in 2008; an update to
ProMash was made available at the time. If a similar update isn't forthcoming
the next time around, I'm not sure how big an effort it would be to roll your
own update.

Hi Ian, long time no see.

Google "xp virtual machine", or look here :

in-windows-7

Win7 can run a virtual Windows XP machine as a program, and old XP software

will usually run fine inside that shell.

Hello Everyone

Yesterday I migrated from XP to windows 7 64 bit. Sadly all my old brewing

XP 32 bit will no longer will run. I have tried running them in win 95

I use the latest version of Beer Smith but would love to use all this old

software.

Anyone got any thoughts?

Thanks Ian

I tried to send this yesterday, but forgot about sending in plain text so it

bounced.

The Digest has been so quiet, where is everyone. We have a wonderful

resource here can't believe there is not traffic.

Many years ago I downloaded Brewers Workshop and loved it from day one.

Tried to register the software but no response from emails. If you read this

Tom thanks for your software, wish I had the key to open the full version.
