Scientists are sequencing the DNA of brewing yeasts and mapping out a

genetic family tree to better understand their brewing properties. "With

this information, we'll be able to select different properties in yeasts and
breed them together to generate new ones. In a few years, we might be

drinking beers that are far different and more interesting than those that

currently exist," said Kevin Verstrepen, whose lab in Belgium is one of two

testing the yeasts' DNA
