<br>I'm in between brews and got a little bored. I'm a data hoarder so this
<br>information comes from an old HBD from Janruary 1994. Pat Anderson published
<br>his notes of a talk by Dr. Michael Lewis given at Home Brew U on March 27,
<br>1993
<br>titled "GETTING THE MOST FROM AMERICAN MALT."
<br>
<br>Dr. Lewis espoused the idea that using a thick mash (1qt/lb?)and setting a
<br>mash temp of
<br>131-140F for 20-30 Minutes and 158-167F for 20-30 minutes is all the mash
<br>that is
<br>needed for modern Malts.
<br>
<br>My question is if anyone has tried this schedule and what were the results?
<br>

<br>Greetings, Beerlings! Take me to your lager...

<br>At long last, I've initiated the move of the HBD from its commercial
<br>connection to a hosted solution. I will do my best to keep you abreast
<br>of progress, but be aware that the HBD itself (the email list) may be
<br>knocked out of commission while I wrangle the code to conform to its
<br>new environment - I'll run both systems in parallel until either the
<br>new server will run the scripts, or until the HBD coffers run dry.
<br>Unfortunately, I'll have to whack the existing connection as I simply
<br>cannot afford to run a deficit in the HBD treasury against my own
<br>budget at this time. Hopefully, I'll be able to get the scripts
<br>running under their new environment before that happens.

<br>Alejandro is having trouble controlling his fermentation temperature in a
<br>100 gallon conical, glycol jacketed fermentor. Alejandro is experiencing
<br>substantial hysteresis in his temperatures relative to the controller
<br>settings. I have no experience with such volumes, but it seems the community
<br>could use a little more information before we can help.
<br>
<br>My first thought is to reduce the differential from 3 degrees to 1 degree.
<br>This would certainly reduce the hysteresis. It would help us to know where
<br>the temperature probe is located, and I think it would also help to know the
<br>temperature gradient within the fermentor from center to wall and top to
<br>bottom.
<br>
<br>It seems that minimizing the differential on the controller and optimizing
<br>the placement of the probe would be most straightforward approach to this.
<br>Surely the small commercial brewers have a standard workaround to this common
<br>issue.

<br>As I see it you have multiple problems. First your 3 degrees differential is
<br>
<br>too high, and let's assume your temp probe is in the middle of the
<br>
<br>fermenter. The fermenting wort close to the walls cools fast unlike the
<br>
<br>middle. Even when the ferment is rapid it will overshoot your required temp.
<br>
<br>Some thoughts for you.
<br>
<br>1. Reduce your differential say to 1 degree.
<br>
<br>2. Restrict the output of your glycol pump to slow the cooling rate.
<br>
<br>Reducing the differential will mean your cooling pump will run more often,
<br>
<br>but for a shorter time.
<br>
<br>A timer will cause you grief when you need to crash the ferment at the end.
<br>
<br>You will need to experiment to get your system tuned to your needs. I would
<br>
<br>play with your differential first, keep reducing it and this may be all you
<br>
<br>need to do.

<br>Subject: Problem controling fermetation temp
<br>
<br>Hi all! I've recently started fermenting using a 100 gal conical, jacketed
<br>fermenter. I'm attempting to control the temperature using an A419
<br>Johnson temp control, set to start glycol flow through the jacket at, say,
<br>68 deg Fahrenheit. The temperature at which the relay is turned off is
<br>defined by the temp differential, say 3 degs. So, in theory, when the
<br>thermostat reads 68 or higher, the glycol starts to flow, until the temp
<br>falls to 65 degrees.
<br>
<br>The glycol is stored in an insulated tank ranging from about 23 to 28
<br>degrees.
<br>The problem is, apparently there is a lag time between the moment
<br>that the correct amount of heat has been drawn out from the wort in
<br>the tank, and the moment that the sensor actually reads the target
<br>temperature and stops the glycol from flowing. So what happens is
<br>that the temperature keeps dropping quite some time after the glycol
<br>
<br>has stopped flowing, bringing the temperature way below the lower
<br>limit (say, 57 or 57 degrees). This can have quite adverse effects on
<br>the yeast, as you all know.
<br>Since the fermenting wort is not supposed to be moved around in the
<br>tank (which would homogenize the temp and provide a quicker, correct
<br>read), I figure I might use a timer to limit the flow of coolant for a set
<br>
<br>length of time, assuming that the correct amount of heat will be
<br>subtracted from the wort.
<br>An opinion, anyone? Do you think this is the best way to go?

<br>For anyone who may have peeked in on the Finances page, the HBD coffers are
<br>on the wane. We could definitely use any donation you can spare - and, if
<br>you itemize on your US taxes, any donation you make is deductible to the
<br>full extent allowable under the law - see the Disclosures link on the HBD
<br>website for the IRS determination letter.
<br>
<br>Also, the pace of life is keeping me from doing as much with the code as
<br>required to port the HBD and Brews and Views to new systems. I am looking
<br>for some coding help:
<br>
<br>The current system for the HBD is a redhat-flavor, sendmail-based server.
<br>The target is Ubuntu (Debian-flavored), postfix based virtual server
<br>operating under Virtualmin. The scripts that drive it are predominantly
<br>kornshell, with some perl and C thrown in for good measure. If you are
<br>familiar with both OSes, both email servers, ksh, perl, and C, and have the
<br>capacity to dig in and assist, pop me a note and let's talk!
<br>
<br>Brews and Views is on that same redhat flavored box and runs on Discusware
<br>Pro. The target machine is, again, virtual and Ubuntu based, and the
<br>software is phpBB. Through the brief research I've been able to do with the
<br>time available, by installing an old version of phpBB, the Discusware
<br>system can be converted to phpBB, and then phpBB can be upgraded to the
<br>current version. If this sounds like something you're capable of and
<br>willing to tackle, give me a shout.
<br>
<br>But, primarily, HBD needs funding to continue. Please consider a

<br>All looks good excepting the mashing water treatment. While the small
<br>addition of CaCl2 is appropriate, it alone is not likely to move the mash
<br>pH down into a desirable range around 5.3. An external acid addition via a
<br>lactic acid or acid malt addition will be required. For German styles,
<br>those acids are desirable since they contribute lactate which is a
<br>component in the overall flavor profile.
<br>
<br>You mention sparging water acidification. Due to the very low alkalinity of
<br>Seattle water, there is little need to acidify that water. But it doesn't
<br>hurt. It should only take a few drops per gallon to make the pH drop like a
<br>rock.

<br>My home brew club is doing a group brew of a pretty simple Kolsch recipe; I
<br>figured I'd share my Kolsch / light beer tips and I'd solicit any others that
<br>people have.
<br>
<br>As you can see I'm very much interested in a Kolsch without any HINT of
<br>graininess or lingering / harsh bitterness and that is bright / clear.
<br>
<br>Grist:
<br>
<br>* As always if you want to go traditional a simple grist is the way
<br>to go and always use German ingredients; a blend of mostly Pilsner with some
<br>light malted wheat and a small bit of light Munich if desired
<br>
<br>* Dough-in: I find the German Pilsner + wheat malt combo to really
<br>result in a lot of dough balls so be ready to really spend some time getting
<br>doughed-in properly if you're mashing in above the gelatinization temp
<br>
<br>* Milling: Conditioning your malt will help keep husks from getting
<br>shredded; shredded husks release more tannins/ polyphenols which ruin light
<br>beers, IMHO (use 2% water by weight sprayed with a fine mist and thoroughly
<br>mixed; -let set for 10 min before milling
<br>
<br>Water:
<br>
<br>This is an area I'm looking for tips; I have EXTREMELY soft Seattle water
<br>that I treat with double stage carbon block filters.
<br>
<br>* 1 Tbsp calcium chloride added directly to the mash (to help the
<br>mash ph, aid clarity and to focus on soft, malty flavors)
<br>
<br>Mash:
<br>
<br>* I like to mash light beers on the thinner side to have less sparge
<br>water to decrease the likelihood of extracting tannins
<br>
<br>* Mash low for that high fermentability that you want in a kolsch;
<br>alternatively multistep infusion mash or upward infusion mash (the upward
<br>infusion mash starting from below the gelatinization temp will avoid dough
<br>balls as an added bonus) -I target 63C which I guess is 145.4F
<br>
<br>* Recirculation mash for 60 min; if not recirculating a 90 minute
<br>mash will give you that extra bit of fermentability
<br>
<br>* Avoid oxygen pickup especially if recirculating -oxygen will
<br>increase color of this VERY light beer style
<br>
<br>Sparge:
<br>
<br>* Again limit oxygen pickup
<br>
<br>* I batch sparge my kolsch to reduce the risk of over sparging and
<br>extracting grainy tannins
<br>
<br>* Acidify sparge water to avoid extracting grainy tannins
<br>
<br>* Heat the initial runoff (First runnings) to 68C and hold there to
<br>"super charge" enzymes and to essentially perform a 2nd step
<br>
<br>* Target a lower-than-normal 1st batch sparge temp of 68C to "super
<br>charge" enzymes left in the mash as an essential 2nd temp step
<br>
<br>Boil:
<br>
<br>* At home brew scale 90 minute boils for DMS from pilsner malt are
<br>largely unnecessary; this especially holds true with my 1:1 height to width
<br>kettle geometry and high boil off rate
<br>
<br>* I use an electric low heat density element and turn the heat
<br>output down to 60% for all but the last 10 min of the boil to keep the wort
<br>darkening to a minimum
<br>
<br>* With 10 min left to the boil I add both whirlfloc and polyclar
<br>(PVPP) the combination is GREAT at helping both hot break and tannin
<br>flocculation but results in lots of fluffy trub and large wort losses
<br>
<br>Chill:
<br>
<br>* Chill rapidly below 140F to prevent DMS formation
<br>
<br>Fermentation:
<br>
<br>I'd love some discussion on temps with the different kolsch strains
<br>
<br>* The colder you're fermenting the more yeast you need but target in
<br>between ale and lager pitch rates, depending upon fermentation temp
<br>
<br>* Transfer off of the trub, prior to pitching, as in the German
<br>tradition
<br>
<br>* Pitch at fermentation temps -don't pitch high and wait for it to
<br>chill; upward fermentation ok; flat fermentation temp profile ok; downward ==
<br>bad
<br>
<br>* Personally I simply ferment at 60-63F
<br>
<br>* Either skim off the "braun hefe" -brown fermentation crud or let
<br>it blow off via blow off tube to avoid harsh bitterness
<br>
<br>* Lager: cold and long (-1C for as long as you can stand it)
<br>
<br>I'm very much interested in tricks to get this thing to drop bright when you
<br>only have 3 weeks to lager. Should I just give up hope with a Kolsch strain
<br>and clarity without filtering; any finings recommendations?

<br>Thanks for the response from so many people re my migration from XP to
<br>
<br>Windows 7. Shortly after all your helpful advice came in we went to the UK,
<br>
<br>and have recently returned.
<br>
<br>I have since discovered that changing from 32 bit to 64 appears to has
<br>
<br>caused some of my problems.
<br>
<br>Re software we have installed a virtual machine running XP and my trusty old
<br>
<br>software works again. My Son Sean did all the cleaver stuff using VMware
<br>
<br>virtual player, not sure why we did not use the Microsoft version but this
<br>
<br>one works very well.
<br>
<br>Some of the groups advice re networking software made me think what else can
<br>
<br>I do to make brewing days easier. I have faithfully recorded by hand every
<br>
<br>batch of beer I have made, but am finding some days I struggle to hold a pen
<br>
<br>for very long so maybe a tablet in the brewery is the way to go.
<br>

<br>lager that wasn't carbonating. I did as instructed, moved the
<br>bottled lager to a warmer clime, inverted the bottles several times
<br>and waited. As of yesterday it is nicely carbonated and tasting great.

<br>George can't get his lager to carbonate in the bottle after 3 months of
<br>lagering the beer at 40 degrees (F), bottling, and waiting for 4 weeks with
<br>the beer at 55 degrees. I'm assuming that no yeast was added at the time of
<br>bottling and that sugar was.
<br>
<br>I suspect the lagering period dropped out the yeast so well that the beer
<br>simply doesn't have enough yeast now to ferment the priming sugar. I've seen
<br>this happen a lot with extended periods of letting the beer drop the yeast,
<br>and now always add a small amount of fresh yeast at bottling for bottle
<br>conditioning.
<br>
<br>I would suggest making up a small starter of fresh yeast (same yeast) and
<br>pipetting some fresh yeast (1 million cells per mL beer) into each bottle,
<br>recap, and allow the beers to carbonate at a somewhat warmer temperature, say
<br>68 degrees. The fermentation of that small amount of priming sugar at this
<br>warmer temperature shouldn't significantly affect the flavor of the beer. If
<br>you are concerned, you can carbonate at 55 degrees. If it doesn't carbonate
<br>fast enough for you at 55 degrees, warm it to 68 degrees, and it should
<br>carbonate. You'll know that you have yeast in there to do the job.

<br>I lagered a bock in a 40 degree fridge for 3 months after a good
<br>fermentation and room temp rest.
<br>Then I bottled it like an ale but it doesn't want to carbonate after
<br>4 weeks in the bottle at 55 degrees.

<br>I make a gruit every year or two. The recipe changes every year, here is one

<br>horehound. It tasted good going into the fermenter!
<br>

<br>After the brewing software runs again(at least if you have Promash...),
<br>i want to ask you something else.
<br>
<br>I wanted to brew a gruit ale for a long time, but i couldn't find the
<br>herbs suggested. (Not available, too expensive or from too far away)
<br>
<br>One of the hard to get plant was wild rosemary(ledum palustre). It's
<br>also slightly toxic, but what do you expect in a "whiches brew".
<br>
<br>Yesterday i stumbled upon a German company, that sells this plant.
<br>(Shipping to my country is not too expensive)
<br>
<br>Then i found another company, that supplies the rest of the suspects.
<br>
<br>Myrica gale
<br>Achillea millefolium
<br>Calluna vulgaris
<br>Artemisia vulgaris
<br>Artemisia absinthium
<br>
<br>I ordered all of these live plants and will put them in my yard.
<br>Hopefully they will grow nicely.
<br>

<br>I found some recipes on the net, but is there someone on the HBD with
<br>gruit experience?
<br>If yes, can you give me some insights? Recipe, no-goes handling of the
<br>herbs and so on?
<br>I will also reread "sacred herbal healing beers" from Steven Buhner.

<br>Similar to what Pete and Pat do, I run Promash from several computers
<br>at home with a single "central" database. I use Dropbox! The whole
<br>Promash program (and associated data files) is installed in a Dropbox
<br>directory, and I just run it from there. I could even run it from work
<br>without
<br>any more serious security concerns than I'd already have with Dropbox.
<br>
<br>(My employer has very serious concerns, so I can't really do that. Not due
<br>to Dropbox's security, just because they do NOT want us linking to any kind
<br>of
<br>location where we can upload mass amounts of sensitive data from the
<br>workplace.)

<br>I'm running ProMash on my Win 8.0 tabled computer. No problems, no XP
<br>emulators.
<br>
<br>I found an interesting way to use it with multiple computers and just one
<br>database.
<br>
<br>I have an XP desktop computer where I keep my recipes and inventory of
<br>grain, hops, etc. When I brew I brew in the garage and take a portable
<br>computer out there with me. I used to use a Win 98 laptop, then an XP
<br>notebook, and now a Win 8 tablet. I found I could run ProMash on any of
<br>these computers and access the desktop data using a few simple steps.
<br>
<br>(1) Set up network and sharing properly so each computer can access the data
<br>files and program files on the desktop. In my case the databases are in My
<br>Documents and ProMash is installed in Program Files.
<br>
<br>(2) Install ProMash on all computers. I hope this doesn't violate some
<br>terms of use for ProMash. I am the only user and only for my home brewing
<br>and I use it on only one computer at a time.
<br>
<br>(3) Using the "portable" computer go to the copy of ProMash on the desktop
<br>(C:\Program Files\ProMash\) and click on ProMash.exe.
<br>
<br>ProMash will open and run just like it was on the desktop with all the
<br>recipes and inventory files. I guess by installing ProMash on the portable
<br>computer I get all the dll and other environment files I need to run ProMash
<br>and by running the version on the desktop, it knows where all the files are.
<br>So while I am brewing I can check and update my inventory, view my recipe,
<br>and what ever else using just one central set of data.

<br>I will echo Pete's comments. Runs like a top on all my Windows boxes -
<br>ProMash doesn't appear to wrangle the registry at all. I'm pretty sure it
<br>keeps all of its presets and preferences in static files within its folder
<br>
<br>As opposed to Pete, I keep my database on an NAS drive, and can access it
<br>from anywhere in my home. As an experiment, I did have it outward facing at
<br> one time, which let me access it from anywhere I could get a WiFi or 4G
<br>signal, but it quickly became a "hacker's honey pot", so I put it back
<br>behind the firewall.

<br>I've got a mead fermenting that started at 1.121 and is now down to
<br>1.006 (1.023 corrected). Since it's still fermenting it might finish
<br>a little dry, so I thought once it stabilized I'd back-sweeten it
<br>with some honey, but of course I don't want to restart fermentation.

<br>What's the best way to kill off any remaining yeast? Potassium
<br>Sorbate? Potassium Metabisulfite?
<br>
<br>What's the best thing to use and how much should I add to a five gallon batch?

<br>Have you tried the virtual XP, that comes with Win7 Pro and higher?
<br>Sadly, it doesn't come with the home version.
<br>
<br>I guess, most old software will run on it. (if it doesn't make use of
<br>the hardware extensively, or uses strange programmers tricks)

<br>By the way, i also got a "new"(used Dell, like new for 300$) notebook
<br>with Win7 64 Pro.
<br>I will try to install Promash, my preferred brewing tool. If it doesn't
<br>work in native Win7, i will use virtual XP. (In the brewery, it runs
<br>happily on Win98 for now. No need to change, until this HW dies... i use
<br>a old 256Mb USB-stick with Win98 drivers for backup)

<br>Ian Ramsay asks about old brewing software and Windows compatibility. I'm
<br>still a committed ProMash user and have successfully run it with every
<br>version of Windows from Windows 95 to 64-bit Windows 8.1. There was a
<br>problem with ProMash not loading with 64-bit versions, but this was
<br>addressed about 2007-2008 with a "new" version of the ProMash installer.
<br>It's still available for downloading on the ProMash website. You, will,
<br>however, have to enter your registered user code and key. If you no longer
<br>have them, there is an automated utility on the site to send them to you,
<br>but it uses the e-mail address you first used to register ProMash.
<br>
<br>I don't use much other old brewing software apart from some spreadsheet
<br>utilities, so I must say I haven't had compatibility problems. If you do
<br>have an old piece of software you're attached to, and you are certain it
<br>really requires Windows XP, the solution is to download and install a
<br>"virtual XP machine" and run it under later Windows versions. A virtual XP
<br>machine (it needs to be installed) came with the Professional and Ultimate
<br>versions of Windows 7, but this was discontinued beginning with Windows 8.
<br>However, there are a couple of free virtual machines available if you do a
<br>search for them.
<br>
<br>Incidentally, a virtual XP machine is the solution for all software that
<br>truly requires XP. If you are concerned about the security implications now
<br>that Microsoft no longer supports XP, running a VM is an excellent choice.
<br>It keeps XP isolated from various security threats by "surrounding" it with
<br>Windows 7 or 8.

<br>With respect to the recent note in the Digest (James Worley -
<br>"Uh-oh"), I thought it prudent to spell out the current state of the
<br>HBD.
<br>
<br>Again, our monthly outlays are for hosting of our servers, and for the
<br>electricity bill delta experienced when the Digest came home. We also
<br>have annual filing fees within the State of Michigan (to maintain our
<br>not-for-profit corporate status within the state), registrar fees for
<br>our domain names, PO box rental fee. No one involved with the HBD's
<br>administration is paid for their time.
<br>
<br>Most of the fees we pay are updated to reflect actuals as prices and
<br>they change, up or down; however, we have not changed the amount the
<br>HBD kicks in to the electric bill since 2005, even though rates have
<br>literally skyrocketed since then. Wherever possible, we enter into
<br>multi-year contracts if doing so presents a savings to the HBD. We
<br>also no longer attempt to add a maintenance fund to the budget as,
<br>frankly, we have been literally squeaking by on the donations we've
<br>been able to garner. Thankfully, nothing major has failed in recent
<br>history, so, though we may be whistling past the graveyard in that
<br>regard, we've not been "smacked down" by any major hardware failures.

<br>who you are, but if you've forgotten, see the "Donors" link on the
<br>HBD.org web site.)
<br>
<br>The economy sucks. People are out of work. Costs are soaring, and
<br>there is little available to most for donating to anything. Certain
<br>funding avenues promised (we thought) upon regaining our 501(c)3
<br>status and obtaining an official letter of recognition did not
<br>materialize. Some folks did respond with donations as a result of Mr.
<br>Worley's note; however, that response was only enough to push the HBD's
<br>potential bankruptcy from March to May.
<br>
<br>Participation in all facets of the HBD are dismally low. An effort is
<br>being made to update the Brews and Views to new technology (paid for
<br>via a specific fundraising effort on the B&V board last year; excess
<br>released to the general fund last month) in the hopes that update
<br>software will bring back many past participants who left for more "high
<br>tech," mobile-friendly venues; however, the HBD mailing list itself "is
<br>what it is", and I expect no changes significant enough to spark a
<br>resurgence in participation there.
<br>
<br>In the past, I've stated that as long as my wife and I held our jobs,
<br>I would be able to carry the HBD through bad times such as these until
<br>such time as the economy would recover and folks would be able to
<br>donate again to make up any deficit. Unfortunately, the first part of
<br>that commitment fell apart in June when my wife lost her position. I
<br>no longer have the financial buffer to carry the HBD should it go
<br>negative, so it is time to face the very real potential of the HBD
<br>becoming a historical footnote on the net. In the event this happens,
<br>only the archives will be preserved, and then only as long as the mode
<br>of preservation selected remains.
<br>
<br>So, to Mr. Worley's point: it's decision time. Is the HBD worth
<br>maintaining, or is it time for the old girl to slip under the waves?
<br>Based on our incorporation and registration with the IRS, our choice
<br>is limited to just that as the HBD domain names must be sold, and its
<br>equipment, holdings, and proceeds must be liquidated and donated to a
<br>501(c)3-registered "like cause" or turned over to the government upon
<br>failure - not the anticipated result of our filing, but required by law.
<br>
<br>The HBD's financial needs are modest. This year's budget, excluding
<br>any maintenance or catastrophic requirements, is $3,235.00. To date,
<br>we've spent $ 346.79 against this amount, and $2,888.21 remains to be
<br>spent. Subtracting what remains in the HBD treasury currently, $1,947.22
<br>more is needed to take the HBD to the end of 2014 (see table in the
<br>Digest header or on the Finance page at <a href="http://hbd.org">hbd.org</a>) - this represents 98
<br>donations of $20 apiece. Further, if just 200 of our subscribers were
<br>willing to make a tax deductible donation of $20 annually, the Digest's
<br>needs would be covered - including a modest maintenance fund - and we'd
<br>likely not need to have this particular discussion again.
<br>
<br>We, the HBD Board of Directors, believe the HBD remains a valuable
<br>resource and hope that enough of you do, too, to see to its needs.
<br>

<br>I guess the decision is whether HBD is valuable enough to pony up, or if
<br>it's time to let it die. I think it'd be a shame to lose it - even as
<br>sporadic as the actual digests are these days - plus, I can't stand the irony
<br>of them getting their 501(c)3 status just to go bankrupt. A sign of the
<br>times, I guess.
<br>
<br>For my part, as little as I have, I'm coughing up some bucks to keep it
<br>going.

<br>I recently ran an experiment that I've wanted to try for a long time. I had
<br>a bad batch of yeast (I think it got too cold) and was stuck with a fresh
<br>batch of wort (a blond Kolsch-like base) and no beer yeast. Instead, I
<br>direct pitched an appropriate amount of dry wine yeast (K1V-1116). It took
<br>off within a couple of hours and by the next day an extremely thick head
<br>had formed with what looked like a tan/brown leathery outer skin. The
<br>temperature during fermentation has floated between 58-62 F. After five
<br>days the head finally developed some cracks and began falling. However,
<br>through the cracks white foam is bubbling up gently. I'm guessing by now
<br>it's chewed through all the simple sugars and is now struggling with the
<br>malt sugars.
<br>
<br>Has anyone here tried fermenting beer entirely with wine yeast? How well
<br>did it attenuate and what was the flavor profile like? How long did it take
<br>to finish?
<br>
<br>Another yeast question I had was regarding lager yeast harvesting and/or
<br>repitching. I recently moved to a much cooler climate and so lager brewing
<br>without refrigeration is now a possibility. I've consulted all my brewing
<br>books but without exception they only discuss havesting/repitching
<br>techniques for ale yeasts. I'm going to be brewing utilizing open
<br>fermentation so access for harvesting will not be problematic. I would
<br>assume top cropping is not possible due to the bottom dwelling nature of
<br>lager strains. Am I left with scooping off the bottom after primary and
<br>culturing up a starter for the next batch? Or should I try harvesting prior
<br>to the end of primary (or at some other stage)? Since I'm not using a
<br>cylindroconical "dumping the cone" is not an option.
