I seem to remember from a decade ago that a simple acid-wash with tartaric
or phosphoric acid
will de-flocculate yeast. But if you have EDTA handy on your shelf why not
give it a go.

Greetings, Beerlings - take me to your spare change...
As much as I hate doing so, I'm coming hat-in-hand to the HBD
community once again. As shown in the Digest header, we're in pretty
poor financial shape. Our Form 1023 was received by the IRS, but,
apparently, did not pass muster, and is, also apparently, being
assigned to an agent. The IRS has a pretty huge backlog, and is
currently working on forms submitted in February 2012. Ours was
submitted in June. Per their flow chart, We received their
acknowledgement of receipt, and must have filled out the correct form,
and included everything from their procedural checklist, or we would
have received it back - that much is good. Having had no
communications from them, I cannot say further. This situation is
preventing us from being eligible for at least two grants - grants
which I had hoped would preclude the necessity to send these "begging
letters" each year - but we are where we are. I cannot ascertain
whether donations made at this time are deductible. If approved for
reinstatement, the status is typically retroactive, but, again: I
cannot say what the future holds in this regard. I can say that, in
its current condition, the Board will be discussing dissolution
procedures at our next annual meeting.
If you can spare a few bucks and deductability is not a concern,

EDTA is used to prevent coagulation of blood and does so by chelating
calcium (as does EGTA) so it stands to reason that if yeast flocculation
cannot take place unless calcium is present those chemicals should work
for yeast too. But I've never noticed that yeast fails to flocculate in
starters ior beers made with low calcium water. No calcium might be a
different matter.

Subject: Counting flocculated yeast
When making yeast starters, I usually ferment these to completion, allow the
yeast to flocculate, decant the spent wort/beer, and pitch only the yeast. I
usually try to anticipate when they have almost finished the starter
fermentation and grab a sample for counting the cells, but I often forget and
end up with flocculated yeast. When the yeast have flocculated heavily, it is
really impossible to get a reliable count. I would like to suspend the
flocculated yeast as thoroughly as possible, take a sample of this, treat the
sample to deflocculate them, and then count them. Would treating the sample
with EDTA or EGTA do the trick? How do the pros do it?

The Bruery is not too far from Disneyland. If you like Belgian-style
beers, you should definitely check it out. As a brewery under California
law, they have a tasting room (not a "bar", not a restaurant) with
somewhat limited hours: Monday-Thursday: 5pm - 10pm. Friday: 2pm - 10pm,
Saturday & Sunday: 12pm -10pm. I was there a couple years ago. At that
time, you paid $10 and got a small snifter and 4 or 5 tokens, each of
which could be redeemed for one fill of the snifter. (You got to keep
the snifter.)

Are there any good beer stores or brewpubs fairly close?

Subject: Beer near Disneyland
The Bruery is not too far from Disneyland. If you like Belgian-style
beers, you should definitely check it out. As a brewery under California
law, they have a tasting room (not a "bar", not a restaurant) with
somewhat limited hours: Monday-Thursday: 5pm - 10pm. Friday: 2pm - 10pm,
Saturday & Sunday: 12pm -10pm. I was there a couple years ago. At that
time, you paid $10 and got a small snifter and 4 or 5 tokens, each of
which could be redeemed for one fill of the snifter. (You got to keep
the snifter.)

The American Homebrewers Association is now accepting submissions for
educational seminars and poster presentations at the 2013 AHA National
Homebrewers Conference in Philadelphia, PA.
The conference theme, Brewing Up a Revolution, is based on Philadelphia
playing a large part in the American Revolution and being at the edge of
brewing revolutions throughout American history. This conference will present
ideas to keep the modern brewer at the forefront of homebrewing, mead-making,
and cider-making.
