Hi Dave,
Leaving the BJCP specs of an IPA to one side for the moment...
If you are keen on a true IPA, I'd use the MO and Crystal and
keep the grain bill pretty simple.
You have a nice selection of hops available and sure, they'll
make a decent US interpretation of an IPA but if you're keen
on the real thing then perhaps some Goldings and or Fuggles
will give you a more authentic traditional IPA flavour profile.
The water here is pretty soft and "clean" so I always Burtonise
with Gypsum before doughing in.
