New problem to me, but I would assemble loosely, apply food grade
silicone, let set a day or two, then tighten. A more heavy duty version
would be to put a SS plate between the fitting and the silicone, a
fender washer would do, or you could fabricate a rectangular plate to
create more support. This would be more solid and act as a heatsink to
help with any heat conductance problem with the silicone. It would in
effect create a flat wall, but it would be thicker than the original.
Adding another washer/plate on the outside with silicone and make the
whole thing even more solid, but thicker yet.
I don't know how hot it gets at that point, probably not too hot with
wort present. If it does, you could use high temp silicone, but I don't
know how food safe it is.
I've done the silicone trick on motorcycles and car engines with good
results. Letting it cure while loose and then tightening makes it more
secure. Applying a film of some kind of oil before the silicone is
applied will make it easier to disassemble later on, but all the exposed
oil should be cleaned off before using.

As long as the hole is not down too close to the turn of the
bilge, you can flatten out a landing zone around it by
placing a stack of fender washers on either face and drawing
up on them with the stoutest bolt that will pass through
them. Lubing the faying faces with (water soluble) Draw-X
or K-Y Jelly helps a little. Let it sit a few hours and
re-torque the bolt if you can. As a preliminary, ensure
that the rim of the hole is free of burrs.

I store brettanomyces cultures by growing them in test
tubes with wort + 2% CaCO3, then refrigerating. Most of
the CaCO3 never dissolves, so I imagine there is a buffer
effect where any increase in acidity (during growth or
storage) is countered by dissolved carbonate, which is
replaced in solution by some of the previously undissolved
CaCO3. I'm curious what pH is maintained (and I don't
have a pH meter). Anyone know?

Somehow I've had the devil of a job building an HLT out of an
aluminium stock pot and an electric heating element. The problem is
that the element has a flat flange, while the pot has a curved side.
I've spent a lot of time looking for some way of sealing the join,
but I can't find anything appropriate.

Somehow this seems ridiculous: just about everybody must come up
against this issue. But somehow the shops I've gone to don't build
HLTs. How have other people solved this problem?

I would refine Steve A's verdict to: "Possibly only slightly"

In my experience, lagers that are started colder end up
"crisper and cleaner", if that's what you're shooting for.
Since cutting my lager pitching temps down to the 46-52 F
range, I've seen more consistent (improved) results.

I also had experience brewing a very large (brewpub) batch
of a particular Munich Helles of mine a few times at different
brewpubs, and one location twice insisted on 58-62 F pitching
temps. The result was not as clean, due mostly to a slight
increase in the esters, which were definitely more prominent
than in the 49 F pitched version. (That location also used
a proportion of cheaper malt, which had other effects, so
I shouldn't call this a scientific, controlled example.)

In any case, I expect the results that you get will be
only a subtle increase in esters, and there are lots more
variables in the process that could have a lot bigger effect.
If you did all of those other things right, the your beer
is no way "ruined". I think you'll enjoy the result.

I wouldn't worry about. The difference between where you pitched and the
optimum fermentation temperature isn't significant. I have done the same
thing several times and have not had a problem.

I think that you will probably be alright with your lager. I have tried
both ways, and prefer starting (as you did) at room temp, then dropping it
to fermentation temps.

Let's see what others have to say.

Personally, for a lager / pils I find that the water used and the amt of
healthy yeast, and the grain bill are also quite important.

Perhaps we can get a discussion of this started here?

My considered opinion is, "Possibly".

Particularly lager yeast will form less unsaturated fatty acids(UFA)
when pitched warm. Yeast can only form UFA in the presence of oxygen
and this is typically early (first hour) after pitching into aerated
wort. Yeast with less UFA are more susceptible to "cold shock" and
later when the fermentation slows their membranes will be more "leaky"
which will lead to more secondary products ... esters & fusels. They'll
also be more susceptible to "stuck fermentation" esp in higher gravity
wort.

So if you build up a healthy starter in cool aerated conditions your
yeast are fine. If instead you pitch a lager smack-pack into 70F wort
you are begging for trouble. 62F isn't the worst lager pitching temp
I've heard of and I doubt you'll have a significant problem, but it's
not a "best practice".

As an aside if you don't like the resulting flavors (unlikely I think)
one rescue method would be to allow the fermentation to finish and then
do a referment by adding ~10-15% new pitched kreusen wort. The
additional CO2 blow-off scrubs the less desirable flavors and the new
yeast growth reduces diacetyl levels. The best HB lagers I've ever had
used a secondary ferment like this. I've performed some re-ferments like
this by storing a fraction of the wort in a frozen state ... not difficult.

Many less experienced brewers seem to have a severe lack of patience
between pitching and waiting for the first bubbles out of the
fermentation lock. This leads them to try stunts like pitching into
too-warm wort. Yes yeast grow faster at the elevated temp, but it's not
generally beneficial to yeast health or the flavor of the beer. There
are some special cases, such as when attempting to increase ale esters
or modulate 4VG in a weizen where warmer pitching may make sense -
othewise it's best to avoid.

Veering a bit to the geeky side ... lager yeast can perform very well
at ~65F *IF* they are kept under considerable head pressure (~1-1.5 atm
IIRC). You'd need to ferment in a pressure safe fermenter (corny for
example) and you'd also need a pressure regulation system ... but it
reportedly works well. I'd still want to build the starter in cool
aeration to get the UFA levels up. I should try this ....

If your efficiency and runoff are repeatable, it sounds
like you should be able to simply leave out 1.25 G of
sparge water (maybe just 1 G, to be safe) and instead
add it to the boil kettle after the sparge is over. No?

I would like to have a fermentation/lagering chamber built into a bar or
a bar back so I could also use it to serve beer (depending on the
temperature setting). I could design and build one myself but it would
save time (& probably mistakes) if I could adapt existing plans to my space.

Does anyone have any existing woodworking plans for such a bar or bar
back that they could send me?

I would also appreciate plans for a small portable bar that could be
broken down and taken to homebrew club events.

Subject: Mill gap

I am looking for advice from people who grind their own grain and
fly sparge. Since I purchased a 2 roller mill my efficiency has gone
from 70% to 80%. This new higher efficiency has created more
room in my mash tun but it has also created some new problem for
me.

Now when I sparge I have to drain off the last 1.25 gallons of wort
into a separate container for beers under the low 1.060s due to the
very low gravity of that run off. Once I see how much wort has
gone into the separate container I then add R.O. water back to the
boil kettle to cover the loss. This system is very inefficient as I
waste water and minerals.

I use John Palmer's RA spreadsheet to build my entire water profile
(not just balance pH) and when I make my additions I add minerals
to both the mash and the sparge. I do this because I don't know how
to add minerals to the boil kettle in order to recreate the mineral profile
I built for the beer using the spreadsheet. The mineral profiles that I
create are based on a variety of sources, such as How to Brew, the
calculations from John's RA spreadsheet, advice from pro brewers
and recipes written by others.

So my question is, what is a good gap setting for a two roller mill. I am
looking to go back to my old 70% efficiency so my runoff on normal
gravity beers is not so low. this would solve my problem of wasted water
and waster minerals.

If anyone can think of other solutions to this problem I would be happy
to read them. I really don't want to batch sparge though.

Subject: Water Spreadsheet

For those of you that may have downloaded my water spreadsheet in the
past: It is now substantially expanded and improved. Errors (that have
surfaced) have been corrected and some new capabilities have been
added. It will now, for example, allow you to add the following acids
and their salts: phosphoric, citric, tartaric, lactic and any other
acid for which you know the pK's. You can use it to design buffers and
it now computes what happens when dilution water which is not DI is
added to source water. In fact as it does all the brewing water
calculations I can think of at this point I've named it the Nearly
Universal Brewing Water Spreadsheet.

As significant as the changes to the spreadsheet itself is
availability of a Users Manual for it which it really needed as the
instructions incorporated in the spreadsheet itself were, of
necessity, pretty sketchy. Both the spreadsheet and the manual are
available at www.wetnewf.org. If you have any questions or comments
about either drop me a line.

The caveats that go with this are that the spreadsheet has not been
completely tested by any means (it's too versatile) and the manual is
a first draft. So if you find problems in either I'd like to hear
about it.

Subject: Five Star 5.2

Joey C and Calvin have pointed out that the MSDS that comes with 5.2
says it's phosphates so that must mean it's phosphates. Joey asks my
opinions on it. As I have never used it I really shouldn't (and don't)
have any except for those that I voiced in my posts of the previous 2
days i.e. that phosphate is a funny thing to try to buffer a system
that contains phosphate with and that a phosphate buffer at 5.2 isn't
going to be very effective at buffering. If it works it works
regardless of whether I understand it or not. I'm reminded of Roger
Morse writing about Brother Adam's meads. He said he could give lots
of scientific reasons why Brother Adam's techniques were flawed but he
couldn't argue that his meads were anything less than excellent.

According to the MSDS, 5.2 is "A blend of food grade buffering
phosphates." It does not elaborate. What is you opinion on it's effects
on beer as far as mash extraction, boiling, fermentation and ultimate
flavor?

The AHA National Convention in Oakland will feature not one, but two
incredible commemorative beers: "Brother Levonian Saison" and "Sippin' by
the Dock of the Bay IPA." The IPA is being brewed by Harold Gulbransen and
Pat McIllhinney of Alpine Beer Company. Brother Levonian
was brewed by Mighty Mike and Tomme Arthur of Lost Abbey with a recipe
formulated by me and Dave Levonian.
