Subject: Antique Beers

I have two stories to share on this front...

Years ago I decided to try a Peppermint Patty Stout. I had an idea
regarding a rich, malty, chocolate brew underlined by peppermint
aromatics. It tasted great in my head... I think I actually came up with
it for a Holiday Beer tasting session for the old Compuserve Bacchus forum
(aka Virtual Village Homebrew Society) because I remember getting feedback
from a number of folks when doing an online chat.

Anyway, it started out with an OG of 1.117 (bear in mind that this was in
the days when the only super high gravity beer was Samiclaus) and 3 weeks
after bottling was nearly undrinkable. The peppermint was in your face,
the chocolate was absent, and the residual sugar was horribly cloying. I
took my lumps during the chat (mostly we laughed about it) and forgot about
it.

Two years later I come across the stash and invite my new fellow homebrewer
to try a beer that sounded great and came out wrong. I poured one for him
and was amazed that he really liked it. I tried it myself and, lo and
behold, it had become good!! It wasn't exactly what I was shooting for,
but it was significantly drier and the peppermint was much more subdued.
The chocolate wasn't as pronounced as I would have liked, but it was there
if you looked for it.

That was a happy one.

The other one, not so much, but it still worked out quite well. It started
out as a "Gingered Ale." but we really overdid the ginger. After bottling
it was simply awful. It tasted like sour ginger soy sauce. Again, the
couple of cases went to the side (can you tell I hate to pour beer out?).

I don't remember exactly how long afterwards it was that I became enamored
of Dragon Stout from Jamaica. It has a hint of ginger and a hint of
sourness that really "make" that beer. In a flash of brilliance I added a
bottle of the old ginger/sour ale to a 5 gallon batch of foreign style
stout and it was simply perfect (took a runner-up to BOS in the one comp
I've entered it in, so maybe not quite as perfect to others...). I've made
that recipe a number of times now, and the stash of gingered ale is getting
low. Unfortunately I have no idea how we did it to begin with, so I guess
that my great stout may be lost to history when it is gone.

Glad I'm not the only one "losing" beer in my basement. Admittedly,
the stout came from a shelf that I had intentionally stored beer onto for
aging and sampling over time - I had just forgotten it was there.
Never intended it to produce teenagers and beyond! On another shelf,
elsewhere in the basement, I have a 4 pack of Thomas Hardy that I've
drunk two of: one when it was new, one at, I think, 15 years old. Will
be drinking the third at 20, and the last at 25, if I stick to my
plan. The keg of porter? Totally blind-sided me. I honestly thought it
full of water. Might have to save that for the next time I attend an
AABG meeting before I broach it. Then again, with my attendance
record, that might add a few more years to its age...

I've only added cinnamon to a cider once. I added 1 tbsp of ground
cinnamon to 5 gallons by stirring it in before the primary ferment. It was
very subtle, but noticeable if you were looking for it.

I've been experimenting with spice infusions in alcohol and can give you
some general tips.

All cinnamon infusions give some amount of a woody-phenolic taste.
Real cinnamon (as opposed to the normal 'cassia') is actually the most
woody tasting.
Indonesian Cassia/Cinnamon (Korintje) is closest to the Cinnabon
aroma//flavor.
Vietnamese cassia cinnamon is hottest.
For what I'm doing, 2 gram of cinnamon/liter infused for 30-60 days
gives a notable but not
ovewhelming flavor. I'm using whole sticks. Infusion from powder should
be faster and more
complete.
Adding sweeteners brings up the cinnamon flavor.

I intend to try eliminating the woodness with PVPP(polyclar) - initial
tests taste better (reduced
woodiness, but also some reduced cinnamon flavor).

Since I can't suggest any specific amount you could add ~5gm/l and then
taste ever
day or two. Rack when you like it.

Bottle conditioned. Don't recall when I got into kegging, but pretty sure
I wasn't yet in '95, so there'd be no other options at that time. There are a
few more of them, so I'm waiting a couple more years on the rest of them. I
also discovered a 5 gal keg I thought filled with water to be filled
with my Cocoa & Cream Porter. Haven't tried that one, yet. (Really
need to clean up that basement when kegs of beer go missing in the
clutter...)

Subject: Vintage beers

Every so often I give a few of my beers to my parents who drink some and
stash the rest. Last year I found a bottle of a winter lager from 1998. It
was still drinkable (again, a little oxidized) but still fairly tasty. It
seems that homebrew of even a modest alcohol content will stay drinkable for
a long time.

Subject: Fwd: Blast From The Past

Greetings, Beerlings! Take me to your antique beers...

Stumbled upon my "beer archive" a couple of nights ago - had forgotten
all about it. Within it, I found a bottle of my Up The Creek stout
that was brewed in May of '95. What the heck! Chilled it down, and
opened it up. It smells mildly oxidized, has a light "prune" note.
Carbonation is now more like a lager than a stout, and it won't hold a
head. Tastes a bit like a schwartzbier or a "black lager". All in all
not too bad for an 18+ year old stout!

Any other tales from the crypt out there?

Anyone here know how to identify "acetobacter"?

I just bottled a 007 Amber Ale and along the top inside of the fermenter was
a white scum.

Since I have seen a bunch of fruit flies in the brewhaus, I wonder if this
could be acetobacter?

I can send several pictures if anyone wants to see them.

The ale tastes good, but I wonder what this white scum is.

If you've got a microscope it's relatively easy. Acetobacter are short
stubby rods and grow in pairs or longer chains.

It normally forms a "skin" on the surface that vinegar producers call
"mother of vinegar". They can grow pretty quickly and drop the ph of
finished beer rather quickly in the presence of any oxygen. If you have
fruit flies in the brew house the likelihood that this is your culprit shoots
up very quickly. Acetobacter can make beer cloudy, too.

You can search for acetobacter colony photos to try and compare to what
you're seeing; there are some free images available although most of the
one's I've found are pay-only or require a subscription...

Darrell asks about identifying acetobacter, a potential unwanted guest in
his 007 Amber Ale.

I look under the microscope will help to confirm if you have a bacterial
infection identify the organism and determine if it is a coccus versus
bacillus, and a Gram stain will help to distinguish lactobacillus from
acetobacter. Lactobacillus (and pediococcus) is Gram positive. Acetobacter is
Gram negative (or, I think variable). A full set of culture tests on
different media are probably required to confidently identify the organism.

I'd love to hear someone with experience in identifying common bacterial
contaminants in the brew house provide us some simple standard procedures for
doing identifying the common contaminants.

In my limited experience, I had what I thought was a pediococcus
infection a few years ago that left a white scum in the fermenter and
on everything else. It's an odd, gritty kind of film that was unlike
the yeast floaters or cold break. I googled 'pediococcus beer' and
found a nice picture of some lambic with the white scum.

I finally had to replace most everything plastic and nuked my plastic
minibrew fermenter with iodophor then bleach. The beers tasted ok, but
continued to get a strong tang taste plus white scum in the bottles.
It was ugly and frustrating. Older bottles turned into gushers. I
actually quit brewing for a few years because of this.

If it was aceto, I think you'd know by the smell.

Darrell,

Acetobacter can be identified by acetic acid (vinegar) taste or in later
stages as a "mother of vinegar" gel, which will be useful as a starter for
your next vinegar.

Since you noticed no bad effects in the taste, I suspect you have a yeast
film, the appropriate yeast is often useful in producing sherry from wine. It
is sensitive to oxygen ( and why it floats) so bottling under CO2 will
reduce any activity.

bankrupt in August. Due to recent developments, HBD.org
will likely have to be dissolved per the bylaws once
funding runs out.
