Subject: Chlorine dioxide sources

Karl,

I take it the "camping tablets" that Northern Brewer sells
are not what you're looking for with chlorine dioxide?
(Those tabs are $8.50 for 20. Same stuff as REI sells,
I think.)

Is there a reason those won't work for you? I ask because
that's one of the sanitizing agents that I haven't fooled
with at all, so I'm not familiar with why the camping tabs
aren't desirable. Perhaps because they're not pure sodium
chlorite but instead contain the cyanuric-acid-related
disinfectant as well?

Friends of mine have used these tablets for yeast-washing,
though, so they do work for at least that.

If all you want is the sodium chlorite powder in non-pallet
quantities, maybe a Google search of some "MMS" quack sites
can help you. Nope, I don't know what MMS is, other than
some alleged cure for anything that ails ya, but there is
perhaps a reasonable chance that you can get sodium chlorite
from them, since that's the "cure" that they sell. Whether
the flake/powder form is of a reasonable purity, who knows,
but perhaps there is a reasonably simply way to check that
yourself -- or refer to the equipment-required process
described in "EPA method 327.0".

The (inside) wall of Bill Erskine's carboy that had been filled with PBW for
many months, or perhaps years, has something on it that doesn't come off with
scrubbing. I suspect the alkalinity of PBW has etched the glass. Of course,
there's nothing harmful that can come to the beer or wine from such damage to
the glass, but the carboy may now be difficult (nearly impossible?) to clean if
it is ever used again as a fermentation vessel.

In case it is a calcium deposit, you might try soaking in a dilute acid or EDTA.

I remember this coming up many many years ago. Some knowledgeable person
said to use BBs, i.e. those things used in an air gun. Put some (I don't
remember how much) in the carboy and keep rotating.

WRT to aroma, I recall reading a paper by a French researcher,
(?for the fragrance industry?) perhaps 7-8 years ago who was
arguing that a gas chromatography did in the early phase extract
exactly the components that were likely to have an olfactory
impact. So perhaps looking for early peak sums on a GC might
correspond to extent of hops aroma. May need to correct for
some of the obvious beer volatiles. It may be a way to
collect data needed to develop an aroma formula.

Subject: Hop Aroma Predictor

The comparison with hops bitterness is instructive. Over the years it
has been determined that perceived bitterness correlates well with a
relatively easily measured quantity namely the UV absorption (at 275 nm)
of bittering principal extracted in a particular way and that this, in
turn, is proportional to the amount of alpha acids in the beer. Given
this metric, the IBU, we can compare the amounts of hop alpha acid put
into a beer (determined by measuring, also by extraction and UV
absorption, the amount of alpha acid in the hops themselves) and the
measured IBU as it depends on boil time (when the hop additions are
made), wort strength etc. and come up with a model such as the Tinseth
model. The model can be compared to measured data and its parameters
tweaked to make it fit the data better. The model isn't perfect by any
means. One can predict hopping levels to perhaps 5 IBU provided the
information printed on the hops package is accurate and that one has the
proper values for the parameters in the model. These can only be
obtained by experiment and of course it is necessary to measure IBU on
actual beers to get them. We are in general forced to use the parameters
determined by someone else (Tinseth, for example) and this reduces the
accuracy of the model somewhat because his equipment and methods are not
the same as our equipment and methods.

Now extend this to aroma. There is no IBU equivalent WRT aroma i.e. no
single, simply measured quantity in the beer that can be simply related
to a simply determined property of the hops (i.e. the spectrum of aroma
producing oils). Thus we have no basis for a model and nothing to feed a
model with if we did i.e. no manufacturer lists the spectrum of
essential oils on his packages intended for sale to home brewers though
I'm sure that data would be available if you are buying in quantity
directly from a grower or a growers cooperative.

Bitter is more or less bitter though there is coarse bitterness and fine
bitterness which is not distinguished in the IBU metric. Aroma is, OTOH,
multi dimensional. There are earthy, fruity, floral, spicey, citrusy,
piney.... components to hop aroma and flavor. Each of these can,
doubtless, be associated with particular compounds in the essential oils
but the model itself would have to be very complex to relate the
multiple sources to the multiple aroma note including the effects of
processing (boil length, storage conditions...).

Has anyone developed a good estimator of hop aroma?

Estimating bitterness can be done semi-reliably because
alpha-acids are relatively stable. Estimating aroma is
much shakier because hop oils vary wildly and are much
more sensitive to handling.

But, there has to be some simple way to predict.
Any suggestions?

I have a web-based homebrew calculator that I wrote and have been using for
several years. Since it's publicly available, other people use it too - so
there are about 600 recipes on it now. It's HTML and Javascript on the
client side so it works with all current browsers. It uses PHP and MySQL on
the server side to handle the recipe database. It includes specifications
for BJCP styles so that you can match your ingredients if you so desire, and
also currently has specifications for 69 varieties of hops, 240 varieties of
malts and other fermentables, and 138 varieties of yeast. It calculates
specific gravity (or Plato can be selected) - both original and final, IBU,
abv, color (in SRM), mash volumes and temperatures, yeast cell count
recommendations, recipe compliance with BJCP styles, etc., and works with
different units (gallons/quarts/liters/pounds/ounces/grams, etc).

do my own beer and brewpub ratings - they are available there also.

Some of the users are my local Dunedin Brewers Guild club members, but
others have found BuildABeer too. It's free (I wrote it for my own use, but
others wanted to use it) and does everything that I need to calculate
recipes for beer. Please feel free to check it out and use it if it suits
your needs.
