Subject: BrewStar recipe calculator

If anyone needs a free (open source) recipe calculator,
I just added a new one to the SourceForge site:

http://brewstar.sourceforge.net

The program is still "beta" and evolving. To use it,
download the two files and then use your browser
to open the .html file. The second file is the data file.

Why another program? I needed a program that didn't
require an installation or depended on a particular OS.
You can use BrewStar on anything with a browser.

Please let me know if you find a bug or an improvement.

I have racked the beer into secondary and it seems to be ok.

I will bottle some and keg the rest
I want to see if the smell disappears in the bottle.

While I was originally thinking, what is this spam, after reading it, in the
least it is beer history.
What I was wondering is if they even though of spirits and beer/wine to
contain the same uplifting ingredient.
They were probably considered two different things to do to your body.
It probably wasn't until science and chemistry was taken into account that
we realized they are the same thing, and equally dangerous.
Their condemnation of spirits was falsely placed where it should have been
on, indulgence.

We have received a few inquiries regarding Nottingham batch #
1080961099V exp. date: 12/2011 which have lead us to comments on
homebrew forums regarding fermentation problems. While our tests on
this batch of yeast have shown normal fermentation performance and many
of the comments on forums show others having normal performance with
this batch, unfortunately we also note with serious concern the comments
of brewers who have reported poor performance. Accordingly we feel we
should stop the sale of this particular batch of yeast, given the
concerns of homebrewers, as we work to investigate further.

We have asked distributors and homebrew retailers to return any yeast
from this batch to us for replacement. If you have sachets from this
batch of yeast please return them to us and we will replace them with a

Rowan
The sulfur smell is common on several yeasts during fermentation
and will go away as the yeast reabsorbs chemicals as it completes it's
fermentation. If the smell lingers after fermentation is complete that
may be a problem but it usually subsides.

Subject: Beer in the Bible

When I was growing up, it was considered sinful for Christians to
drink beer, and so, when I dedicated my life to the Lord, I became a
teetotaller. However, I noted that the Bible does not condemn
drinking per se, but drunkenness and out-of-control intoxication.
Solomon in the Proverbs warns against the dangers of mixed drinks and
strong liquor. Paul writes to the Ephesians to avoid being drunk with
wine, which he describes as "dissipation."

On the other hand, we have a clear example of Jesus turning water
into very good wine at a wedding feast, and the same Paul advises
Timothy to drink a bit of wine now and then for health reasons. It
does not appear that alcohol was considered sinful by the Biblical
writers in the same way as my peers in a small Colorado farming
community. But beer seems to gain no mention at all.

At least that's what I would have thought before I read a fascinating
article in Biblical Archaeology Review for September/October 2010
(Did the Ancient Israelites Drink Beer? by Michael M. Homan). It
would appear that the lack of prominent mentions of beer in the Bible
are due far more to the inadequacies of translation than lack of
mention by the Bible itself.

In the article, Mr. Homan cites several mentions of beer, brewing and
a popular beer culture in ancient times, which are reflected in the
Biblical record. He even gives a recipe for ancient beer as brewed in
Bible times. Apparently, they made barley into cakes, which were
soaked in water and fermented. The similarities to bread-making have
obscured the references to beer in most modern translations.

I found especially fascinating his take on the popular quote from
Ecclesiastes, "Cast thy bread upon the waters: for thou shalt find it
after many days. Give a portion to seven, and also to eight; for thou
knowest not what evil shall be upon the earth." Ecclesiastes 11:1, 2,
KJV.

Mr. Homan's take on this passage is:

Throw your bread upon the face of the water, because in many days
you will acquire it. Give a serving to seven and also eight,
because you do not know what evil will be upon the land.
(Ecclesiastes 11:1-2)

I believe this is a reference to the cakes of bread used in ancient
beer production, as noted earlier. Cast your bread upon the water
and it will return as beer. Much like the phrase carpe diem, the
author advises making beer and drinking it with friends, because
you don&#8217;t know what evil might be coming.

I realize not all of the subscribers of HBD are Christians or usually
interested in the Bible, but this article is still interesting for
its historical value and its commentary on contemporary religion,
especially prohibitions against the use of alcohol in any form. Check

BTW, I've long since made peace with the responsible enjoyment of
alcohol and I enjoy brewing and imbibing a large variety of beer, and
the occasional whiskey without a worry that it is inconsistent with
my Christian testimony. If any of you run across friends or

I recently pitched a starter of WLP002 into an ESB wort.
It started fermenting at around 18C / 64F and gave loads of sulphur.
Has the yeast gone bad? Last time I smelt this I was brewing a Dort!
I raised the temp to help remove the smell.

Subject: Blichmann kettle with whole hops

Has anyone tried using whole hops in a Blichmann kettle with the mash
screen as a hop filter? I used to do this on another kettle I had with
a standard drilled-hole mash screen and it worked great; however, the
button-style holes on the Blichmann screen worry me that they may
become clogged easier.

Are using a magnetic stir-bar of some sort with your stir plate?
If so, why don't you just resuspend the yeast using the stir bar?
If not, how are you using the stir plate?

If you have the PTFE coated bars, I don't think there should be any
problem if you accidentally drop it into your wort with your yeast,
but you could hold a magnet near the spout of the beaker to 'catch'
the stir bar before it flies out.

Beakers are not easy to swirl compared to an Erlenmeyer flask,
especially when they are over half-filled. For me, a 50% full
Erlenmeyer is the easiest amount for swirling - I don't use beakers
anymore.

I would propose purchasing a second 3 liter beaker; then at
pitching time pour the starter back and forth several times
until good agitation has been achieved - better at least than
a "good swirl" would get you.

No experience with Kaffir Lime, but I've used lemongrass once.

Added it with about 15 minutes left in the boil and got an
interesting flavor (what you would have expected) along with an
astrigent tannins that took about a year to fade.

Once it did, the beer was quite interesting, but until then it was
undrinkable. I'd recommend the addition at knockout.

I've recently changed my fermentation equipment and I now find myself
brewing 10 gallon batches, with the wort being divided between two
fermentors. The problem I'm having is dividing the yeast starter to
pitch to each fermentor. I do 2 liter starters in a 3 liter beaker on a
stir plate. For the first batch with my new set up, I merely swirled the
contents of the beaker in an attempt to get the yeast in suspension.
This was done right after taking the beaker off the stir plate, so it
wasn't as if the yeast had settled to the bottom already. I took the
beaker off the stir plate, gave it a good swirl, then poured half the
contents into fermentor #1, and then poured the remaining half into
fermentor #2.

Fermentor #1 took off about 12 hours earlier than #2. Eventually #2 got
going, and all was well. #1 finished in about 4 days. A day or two
later, #2 slowed way down but then continued to weakly ferment for
another week. Eventually, it finally stopped. When I took gravity
readings, both were exactly the same. There's a slight difference in
flavor between the two as well. It was a hefeweizen fermented with WLP
380 Hefeweizen IV. Fermentor #2 beer is slightly sharper and spicy, but
the difference is fairly subtle. My guess is that #1 got more and/or
healthier yeast than did #2.

If you split your yeast starters between fermentors, please tell me your
techniques and results. Is there a better way of handling this.

It occurred to me that I could do two separate starters. The downsides
of that would be that I'd have to do two starters in sequence in which
case one would be older than the other and thus they wouldn't be the
same and I might get other problems/inconsistencies. Or I'd have two
have two stir plates and two beakers. I don't want to go that route
either as I already have a tendency towards sprawling Rube Goldberg type
set ups!

I have made beers with lemongrass. I added lemongrass to the boil with
about 15 minutes to go. I cut up the lemongrass to provide more surface
area. Later I did dry "lemongrass" with cut up lemongrass that I soaked in
vodka to sanitize. Can't say which provide more lemongrass character but
the combination was very good. One suggestion is that this takes more
lemongrass than you'd think. I used about 6 stalks in the boil and another
4 or so as dry spicing. I would have have doubled this for a more
pronounced lemongrass character.

"Bramling Cross- an "aroma varirety" from Britian. It is a grandparent of
Saxon and Viking. Bramling Cross has a unique toasty, buttery, slightly
resiny aroma with some woody notes. Substitutes: Fuggle, in my opinion,
based on aroma." " Alpha 5.5 to 7.0, Beta acid % of Alpha 2.5 to 3.5,

I have not used it myself, but have always found Al's information to be very
good. His book has great descriptions of hops, yeasts, styles, etc.

Subject: Bramling Cross

It appears that I have won a packet of Bramling Cross hops
from a recent competition. An 11-pound packet, to be precise.
But I honestly have never used these before, so I don't know
what to expect.

I've dug up various information, both good and not so good,
about this variety, and the most encouraging bit that I have
seen so far is that Bramling Cross is the hop that gives
Ruddles County (bitter) its character.

Since I enjoyed Ruddles County when I was living in the UK,
it's not a bad thing knowing that they use Bramling Cross,
but I'd certainly appreciate any and all comments that fellow
homebrewers have had with these. Not repeats of what you get
off the web, though! I've already got those, saying it's
"interesting" and "characterful" and "underappreciated",
among other (scary) things. I'm specifically looking for your
own first-hand experience with Bramling Cross, if possible.

Long time lurker here.

Rowan, I feel qualified to answer your question. Bishops Finger uses
Target hops (grown in Kent) for bittering and East Kent Goldings as the
late hop.
