Subject: Berliner Weisse Yeast

In HBD 6068, Thomas asks about performance of Berliner Weisse yeast. Last
year I made two batches using the Wyeast version. The first was a straight
Berliner Weisse, the second a brown wort pitched onto the dregs of the
Berliner Weisse yeast.

I have never tasted an authentic Berliner Weisse so I cannot attest to its
exact performance, but my beer was tart, not overly sour. They were both
enjoyable beers, but my impression was that my Berliner Weisse was not as
sour as a classic style.

Thomas, if you know or google the Mad Fermentationist, I recall he blogged
about his experience and impression of Berliner Weisse yeast.

Subject: Berliner Weisse

Hello fellow brewers

I was wondering, if anyone has tried the Wyeast "Berliner Weisse"?
If so, what are the experiences with it?

I did two batches, where i made a sour mash for the acidity.
The first batch came our wonderful.
The second batch had a nasty off-taste. (something like those film
wrapped hay bales you see on farms)

I guess there was just the wrong strain of bacteria on the malt...

Since i really like Berliner Weisse, i'm looking for a "foolproof" way
to do it.

Subject: Fruitflies And Alcohol

We keep a fair amount of fresh fruit in out kitchen, generally out in a
large bowl or bowls on the kitchen table. Bananas, apples, etc... The fruit
flies used to be a problem, but no more. My wife bought some fine mesh
produce bags. She said they sell them as re-usable bags to shop for produce.
We started using them to bag the fruit then put it out in the bowls. They
allow air circulation but keep the flies off the fruit. I haven't seen a
fruit fly in months. My wife is happy that I don't complain about the
potential contamination of my beer from the flies anymore as well. As for
the crate of beer bottles, they should have been rinsed shortly after
pouring.

Subject: pH Measurement

Matt posted that one cannot get stable pH readings at other than room

temperature. Horse pHeathers! Do it all the time. Tried to post back on

this but server ignores me unless very brief. Go to

see a recording of hundreds of nice stable pH readings made near 50 C.

To get stability ones needs a stable electrode. That used to imply big

dollars but I think that mold may be broken. Preliminary results on new

Hach PocketPro+ ($110) are very encouraging - seems stable as electrodes

costing twice as much as this meter.

The secret to accuracy, given stability, is knowing your electrode's

isoelectric pH and correcting ATC corrected readings to account for

this. Not that difficult to do. To see preliminary stability test data

Subject: Annual "Going Begging" Plea

Greetings Beerlings, take me to your lager...

Well, it's that happy time of year again - that time I grab my tin cup
and hang out on the virtual corner to pan-handle for he ol' HBD.

Next year, time allowing and God willing, we will see several
improvements to our favorite brewing resource. We've had a new server
waiting in the wings with a new, modern operating system and TONS of
storage space. This box will allow us to re-open the Clubs section and
host club sites advertisement-free. We've also, through a targeted
effort on the Brews and Views bulletin board, raised enough money to
update the software B&V runs on - just need to finish figuring out how
to port the old Discus system data to it. We'll also move the HBD site
from its static self to a more modern and dynamic content management
system (or blog, if I get lazy :) All of these improvements will
render the HBD more "smart phone friendly", which seems to a
requirement of any viable web presence these days. And the more people
participating on the HBD, the better it is for everyone.

Aside from the upgrades we'd like to complete for 2014, your donations
also fund the HBD's day-to-day operating expenses - filing fees, post
office expenses, domain name maintenance; and connectivity and energy
costs.

New for this begging season, the HBD has an IRS Letter of
Determination of Tax Exempt Status. We've been tax exempt under IRS
rules from the day we incorporated, based on IRS rules; however, the
is letter eliminates any question regarding the deductibility of your
donation. This letter, details of our filing for it, and all HBD, Inc.
corporate documents are available via the "Disclosures" link on the
HBD.org web site.

Subject: ph meters

Unless you have a water that is unusually high in alkalinity ( and I mean
really high) I wouldn't think that you should have a worry about using a pH
meter to verify. As long as you are using the recommended amounts per the
manufacturer. They usually account for moderate buffer capacity (AKA -
alkalinity) of most us waters when determining amounts needed to achieve the
desired pH!

Subject: Sanitizer pH

One of the popular sanitizers (I think it is Saniclean) is basically
DDBSA with phosphoric acid used to establish the proper working pH (i.e.
the pH at which a large enough fraction of the ionizable group on the
DDBSA are not dissociated such that the DDBSA can disrupt the bacterial
cell membranes). This could easily be verified with a pH meter.

Subject: pH meters

Certainly anyone can read up and pontificate like experts about pH meters,
buffers and such as some on this site certainly do. Drift is not just common
on the cheap ones but also on the expensive ones ! It really is a matter of
proper storage, cleaning and usage. If you think you can use a pH meter
successfully at any temperature beyond room temp or somewhere close you are
in for a let down. There are so many factors that come into play with pH
probes that I don't recommend using them at all in brewing unless you can
control the conditions and know how to overcome the many issues that come
into play. Unlike other professed experts on this site, I use pH meters
daily for over 25 years, and I have used the most expensive units and the
cheap ones with success! I stand with Mr. Houseman in that for general
brewing related pH measurement it is likely best to go with strips and make
sure the temp is stabilized at or near room temp!

Not sure if AJ would agree, but IMHO good pH strips (ColorpHast for example)
are perfectly adequate for the brewing that we do (well most of us) and at
about $35/100 strips, or $.35 each, are pretty cost effective. No storage
solution. No calibrating solutions. No replacing the probes. In fact
you can make great beer without any pH measurements; brewers did it for
centuries.

But pH meters are cool gadgets.....

Subject: pH Meters

A saturated or near saturated solution of potassium chloride is the
usual storage solution but one sometimes sees the recommendation that
the electrode be stored in buffer. The buffers have plenty of ionic
strength with respect to the bulb itself but low concentration of KCl in
the storage solution sets up chemical potential gradients across the
junction so that water tends to migrate in and potassium chloride out.
This can exhaust/dilute the electrolyte in the reference half cell.

You could probably save money by making up storage solution yourself but
the one's you buy may contain mold inhibitors (as the buffers often do)
and/or buffer.

For brewing applications the enzymatic cleaner Zymit is very good. A
little goes a long way (i.e. a liter should last a good long time) and
is great for cleaning anything else in your brewery that gets gummed up
by beer/wort. The more usual cleaning regimens involve going back and
forth between stong acid and base solutions and some recommend
hydrofluoric acid which actually etches away the surface of the bulb to
some extent (and is also very nasty stuff).

Can't remember whether I touched on this in the last post or not but
erratic readings in distilled water are to be expected and, with
inexpensive meters, drift is commonplace.

AJ,

I was hoping you were lurking around when I posted these questions. Thanks
and thanks to Martin.

You guys have sent me on a path to really understand my pH meter.

Some observations. It drifts measuring distilled water and tap water but
not the 7.01 and 4.01 solution.

I was mistaken when I said the instructions said to store it in 7.01
solution. They said a special solution which was not packaged with the unit
even though they packed two 7.01 and two 4.01 packs and two packs of
cleaning solution. I picked up a bottle of storage solution at my homebrew
place today. I guess the pH meter makers are like printer companies. Don't
make much on the unit but make up for that on the extras. $19.00 for the
storage solution.

So now I will concentrate on calibrating and checking calibration then drift
in various situations, etc.

I also found (and lost for now) a site with a lot of information about how
to clean and "recondition" a probe. It says that sometimes corrects the
drift problem.

If anything come out of these experiments I'll post here.

I would regard a inexpensive pH meter that has never been used and is 2
years old with some suspicion. For general tips on the use of pH meters
in brewing see

(1). Inexpensive meters are infamous for lack of stability. The
reference above give instructions for checking the stability of your
meter (basically measuring the buffers used for calibration over time).
A pH meters relies on the flow of electrical current - a very feeble
flow perhaps but it is necessary that current flow. Distilled water has
a very high resistivity which impedes that current flow, allows local
accumulation of charge... For this reason DI water is very hard to
measure as is any solution of low ionic strength which may include your
tap water. In such cases one uses special buffers and adds ion strength
adjusters to the sample which is also protected from atmospheric CO2
(which would cause pH to fall over time). One or more of these effects
may be responsible for what you are seeing. My money is on electrode
instability. Yes, unfortunately, it is all too common in inexpensive meters.

(2) Yes, as noted above, such drift is all too common. What is really
telling is to do this with one of the calibration buffers. Cover with
Parafilm or aluminum foil to prevent evaporation.

(3) It is possible that lactobacillus or yeast started to grow in that
time period (this lowering pH) but more probable that your electrode
drifted.

(4) Yes, but why not just do what the manufacturer recommends?

(5) Buffers have, as do most chemicals, finite shelf lives but the main
concerns with reuse of buffers is contamination with sample, the other
buffer, rinse water (water is a contaminant because it dilutes the buffer).

I am surprised that they recommend storing the probe in 7 buffer solution.
It probably doesn't have a high enough ionic content to keep the bulb
saturated. The typical probe storage solution employs something on the
order of 1N potassium chloride in the solution. That isn't that saturated
a solution, but its got to be better than pH 7 buffer.

The climb in pH could be a function of several phenomena. Dissolution of
CO2 from the tap water is a possibility, but the fact that the distilled
water displays similar response suggests that this is not the mechanism.
Since you are essentially soaking the probe in a non-saturated solution,
it could be depleting the probe of its ionic balance. I'd say not to soak
it like that. A pH reading is obtained in a few minutes, not hours.

Subject: Questions About pH Meters

I received a pH meter as a gift two years ago. I finally fired it up a few
days ago for an APA I was brewing. All the calibrations worked fine and
have held so far. But I have some questions I hope this enlightened group
can help me with. The meter is a Hanna "Checker".

(1) Although I get stable readings with the 7.01 and 4.01 solutions, with
tap water and distilled water the readings just keep counting up. Fairly
fast at first, through 7.00 and up and up, ever more slowly but they never
stop climbing. Is this typical?

(2) I took a sample of the mash solution and set it aside to come to
temperature. Then about four hours later I measured the pH and got 5.85. I
came back 20 hours later and measured it again and got 4.92. Is it normal
for the pH to change over time?

(3) If so, did the four hour delay cause any error from the actual pH of the
mash?

(4) The instructions say, for storage, fill this little rubber cap with 7.01
solution and place it on the probe tip. Could I use a sample test tube
filled with the 7.01 solution? I would use a tight fitting stopper that was
snug to the sample tube.

(5) The instructions say to use fresh solution each time. Can I just use a
test tube with a tight stopper to store the solutions if I am careful about
evaporation?

Any other advice for a novice?

Subject: Antique Beers

I have two stories to share on this front...

Years ago I decided to try a Peppermint Patty Stout. I had an idea
regarding a rich, malty, chocolate brew underlined by peppermint
aromatics. It tasted great in my head... I think I actually came up with
it for a Holiday Beer tasting session for the old Compuserve Bacchus forum
(aka Virtual Village Homebrew Society) because I remember getting feedback
from a number of folks when doing an online chat.

Anyway, it started out with an OG of 1.117 (bear in mind that this was in
the days when the only super high gravity beer was Samiclaus) and 3 weeks
after bottling was nearly undrinkable. The peppermint was in your face,
the chocolate was absent, and the residual sugar was horribly cloying. I
took my lumps during the chat (mostly we laughed about it) and forgot about
it.

Two years later I come across the stash and invite my new fellow homebrewer
to try a beer that sounded great and came out wrong. I poured one for him
and was amazed that he really liked it. I tried it myself and, lo and
behold, it had become good!! It wasn't exactly what I was shooting for,
but it was significantly drier and the peppermint was much more subdued.
The chocolate wasn't as pronounced as I would have liked, but it was there
if you looked for it.

That was a happy one.

The other one, not so much, but it still worked out quite well. It started
out as a "Gingered Ale." but we really overdid the ginger. After bottling
it was simply awful. It tasted like sour ginger soy sauce. Again, the
couple of cases went to the side (can you tell I hate to pour beer out?).

I don't remember exactly how long afterwards it was that I became enamored
of Dragon Stout from Jamaica. It has a hint of ginger and a hint of
sourness that really "make" that beer. In a flash of brilliance I added a
bottle of the old ginger/sour ale to a 5 gallon batch of foreign style
stout and it was simply perfect (took a runner-up to BOS in the one comp
I've entered it in, so maybe not quite as perfect to others...). I've made
that recipe a number of times now, and the stash of gingered ale is getting
low. Unfortunately I have no idea how we did it to begin with, so I guess
that my great stout may be lost to history when it is gone.

Actually, I remember it well!

Glad I'm not the only one "losing" beer in my basement. Admittedly,
the stout came from a shelf that I had intentionally stored beer onto for
aging and sampling over time - I had just forgotten it was there.
Never intended it to produce teenagers and beyond! On another shelf,
elsewhere in the basement, I have a 4 pack of Thomas Hardy that I've
drunk two of: one when it was new, one at, I think, 15 years old. Will
be drinking the third at 20, and the last at 25, if I stick to my
plan. The keg of porter? Totally blind-sided me. I honestly thought it
full of water. Might have to save that for the next time I attend an
AABG meeting before I broach it. Then again, with my attendance
record, that might add a few more years to its age...
