Subject: Questions About pH Meters

I received a pH meter as a gift two years ago. I finally fired it up a few
days ago for an APA I was brewing. All the calibrations worked fine and
have held so far. But I have some questions I hope this enlightened group
can help me with. The meter is a Hanna "Checker".

(1) Although I get stable readings with the 7.01 and 4.01 solutions, with
tap water and distilled water the readings just keep counting up. Fairly
fast at first, through 7.00 and up and up, ever more slowly but they never
stop climbing. Is this typical?

(2) I took a sample of the mash solution and set it aside to come to
temperature. Then about four hours later I measured the pH and got 5.85. I
came back 20 hours later and measured it again and got 4.92. Is it normal
for the pH to change over time?

(3) If so, did the four hour delay cause any error from the actual pH of the
mash?

(4) The instructions say, for storage, fill this little rubber cap with 7.01
solution and place it on the probe tip. Could I use a sample test tube
filled with the 7.01 solution? I would use a tight fitting stopper that was
snug to the sample tube.

(5) The instructions say to use fresh solution each time. Can I just use a
test tube with a tight stopper to store the solutions if I am careful about
evaporation?

Any other advice for a novice?
