Off topic slighlty but I have relocated from Chicago to Raleigh NC and
I am one of the few people who has Jeffs Solara Ale from his Zymurgy
article too many years ago to mention. I can provide a sample to
anyone in the area who is interested in keeping that going.

However to my point, he also gave away samples of a fantatstic French
Sourdough culture that he had at the NHC in Chicago, does anyone here
have that? I lost my culture from him several years ago.

Bandwidth is slow, so I thought I would ask...

I picked up some crystal rye, and I wonder if it needs a glucan rest at

95-100 or so? It has a very interesting brown color, like British Brown
malt, but a little lighter.

It's pretty likely that the beta glucans present in normal malted rye will
still be present in crystal rye.

The process to make crystal malt would expose the grain to temperatures
higher than normal conversation temperatures and not the lower 98-113F temps
for a beta glucan rest. -Technically if a maltster wanted to they could
perform a beta glucan rest during the malting process by hold the grain temp
at 98 - 113F and the beta glucans would be significantly reduced so the real
answer is "it depends".

The total beta glucan content would depend upon the rest of your recipe.

Whether you "NEED" to perform a beta glucan rest or not is really something
fairly subjective and depends what you want to accomplish. If you're
concerned about the mash run off slowing down as the temp drops towards the
end it will really depend upon your system (mash screen load), your recipe
(total quantity of malts contributing high levels of beta glucans), and your
process (do you mash out?). If you're concerned about beta glucans for some
other reason then: "it depends".

Yep, still around and brewing, but I just skim HDB. I really don't know how
anyone can keep up with the huge lists like the AHA's and other ones.

However, I've been in Europe the last four weeks and haven't looked at HBD
much. Right now I'm at the Toulouse airport waiting for our flight to
Amsterdam and then on to Detroit. The beer in England and Bruges was great,
and I had a really nice draft Dortmunder export style lager in Biarritz
called Oldarki. That's a basque word. It was brewed in nearby Spain. Other
than that, we drank lots of Cahors wine in our week in that region.

i would think this would be the way to go, but then i am fascinated by
historical beers. something i have been wanting to try is traditional
root beer, which was a beer at one time and was developed in PA (i'm
also from PA) around the same time as your church was built (early
1870's). so that would be fun to pull in the PA connection and the time
period connection. it would be a really fun recipe to work on and tweak
to get it just right and probably would have mass appeal. the only time
i have had one was from an amish farmer i use to buy produce from and it
was great. i would think a base of barley and molasses bittered with
juniper and hops (both traditional root beer flavoring) would work good
and be traditional and then flavored at the end of the boil or post
fermentation with a tea made from the herbs, roots, and barks. if you go
this route please share your recipe and results.

I have made ginger ale for my son, and ginger wit, I have not made a ginger
beer.

My family makes ginger margaritas, ginger cakes and ginger ice cream. We
chew

candied ginger and keep it in our cheeks while in class or driving. So I am

obviously slacking by not doing a real ale.

Maybe a cream ale with ginger added?

Hi Ralph,

I made a Pilsner last fall and decided to add 180g of fresh ground ginger in
the secondary at 60deg F for a couple weeks and bottle conditioned with 25%
extra sugar(corn sugar) and it won 2 contests and is asked for everywhere I

Historically, in 1863 lager beer was the craze so Pat's suggestion for a
cream ale is very appropriate. It has apparently been established that
lager beer was originally introduced in America just down the road from
Allentown in Philadelphia by a brewer named Wagner in 1842. You could also
go with a weissbier, which wouldn't have been out of place, particularly
with the wave of German immigration that hit Pennsylvania around that time.

Hail Brewers,

I have been asked to brew a commemorative beer for my church's 150th
anniversary. I've got some time before the official bottling (the
date of the anniversary is December, 2013) so I can work on the recipe
to perfect it for my system and taste, but I am looking for some
thoughts on style and starting recipe at the moment. We have drinkers
of all types in the congregation, so it's not exactly out of the
question to brew something interesting, but I don't want to do
something like a barley wine or imperial stout because of crowd
appeal.

On the other hand, I'd rather not get into the lagering and cold
fermentation necessary to do a really crisp and light beer. I'm
thinking about a Kolsch fermented as an ale, but that's a style I
haven't brewed for nearly 20 years and I don't have a starting recipe
that I know anything about.

In case anyone has the thought that maybe there's a historical tie-in
somehow, the church is Episcopal (that's essentially the American
offshoot of the Anglican/Church of England) and the location is
Allentown, PA (which is where the Liberty Bell was hidden when the
British came looking for metal during the Revolutionary War). I'm not
a history guy, so I don't know anything that was really cooking in
either the area or the US in 1863, but if someone wants to jump in
about something meaningful there, that would be great.

So any thoughts at all that might occur to you would be helpful (beer
style, recipe, and potential tie in to either the churchy bit,
denomination, or history at the time). Thanks much!

Two words: cream ale. Though decidedly more flavorful, pre-pro pilsner
is the great granddaddy for what passes as beer today, and most there
are likely drinkers of that swill (today's beer). Since you're not
interested in brewing a lager, cream ale fits your need because it is
that same beer fermented as an ale. Renner's "Your Father's
Moustache" pre-pro pilsner would serve nicely as the base recipe.
White labs WLP001, or Wyeast 1056 - something clean that doesn't throw
a lot of esters...

It also likely had its roots in or around Pennsylvania.

Ralph, I would be interested in seeing the recipe for your ginger beer.

I will be experimenting with brewing a ginger beer soon. I have just made a
couple of pounds of crystallized ginger and in the process ended up with a
couple of pints of concentrated ginger syrup [equivalent to 8 cups brown
sugar]. My intention is to add this at the end of boil. I will only be using
2 row malt and at the moment I am not sure whether I should make any hop
additions. I will ferment using Saflager dry yeast.

Hi Steven

I don't think the base grain deteriorates much. I used it without
noticing anything.
The darker specialty grains may loose some of its bite.

At one point, we rounded up all of our really old grain(5+ years) and
mashed it. We didn't lauter and boil it, but fermented it after cooling.
Then we brought it to a distiller, who distilled our first "brewery whisky".
It was a huge success... It was only aged 9 months in oak and we filled
some bottles as christmas presents.
We repeated it, but we had to take fresh grain this time ;-))

Steven asks if his 4-5 year old base malt, stored in the bag in the basement
is worth using.

I have no experience with grain this old, but if it were mine, I'd do a very
small mash of about one pound on my stove top and test its ability to convert
and taste it. Put in an exact amount of grain and an exact amount of water
and mash it. If you have a refractometer, measure the gravity of the wort
every 15 minutes and plot out the gravity over a 90 minute period and
determine if it is converting as expected.

After your convinced it is converting properly, pass some of it though a
coffee filter and taste it. It should taste good (of course). You can use the
wort for a starter after you boil it if you don't want to waste it.

Subject: Shelf Life of Grain

What is the typical shelf life of uncrushed grain? I recently uncovered
some base malt that had been double-bagged and stored in a sealed container
at basement temperatures. It must be at least four or five years old. I
also have some odd-lots of specialty grains in my beer fridge (42 deg F) I
have accumulated, and was doing some spring (late summer, actually) cleaning
and was surprised to find that I had dated them back in 2004. They are also
in sealed containers. They are always there, and I just didn't realize how
quickly time flies when you're not paying attention. I'm not worried about
the economic loss, which would be minimal, I just don't want to spend an
entire brew day using this stuff, only to find out at first tasting that I
had used crap grain. But, on the other hand, if there's nothing wrong with
it . . .



I've always tried to not keep any grains longer than two years, and this is
not usually a problem. Just curious if anyone has used "seasoned" grains
and had a bad (or inconsequential) experience. I had been wondering where
that bag of grain went.



Moral of the story: If you lose a 40-lb. bag of grain in your basement,
