Brown?!? That doesn't sound like Starsan, or at least
not mixed, ready-to-use Starsan. Are you talking about
the pre-mix concentrate? The detergent portion of Starsan
can vary some what in color, if I remember correctly,
though I myself have never found it to be darker than
yellowish, certainly nothing like the darker Saniclean,
which is a not-too-disimilar formulation.

Eh? I guess you asked someone about the current color?
Starsan should have been very pale yellowish when new.
I have kept Starsan in the concentrate form for two years
or more at room temperature with no change in color.

For Starsan it is better to use RO water. Hard tap water
can cause minerals to form "soaps" with the sanitizer
components, thus reducing its effectiveness. The cloudy
look that you get with Starsan in hard water is a symptom
of this. Give it long enough (or hard enough water),
you can lose the sanitation effect.

With Starsan, according to the manufacturer, so long as
the pH is 3.0 or below, it's effective. If you have really
hard water and just want to be sure, then mix your Starsan
solution using RO water, and it can last indefinitely.
